Grilled Vegetables with Jalapeño Aioli (Whole30, Vegetarian, Paleo)

These grilled vegetables with jalapeño aioli are a great way to make the most of the last few weeks of grilling season! Zucchini, okra, mini peppers, and red onion wedges grill up quickly and are irresistible dipped in the creamy and spicy aioli. 

Here in the South, the highs continue to sneak into the nineties most days and the markets are still packed with tomatoes, peppers, zucchini, and okra. So while fall may technically be looming on the horizon, I am not ready to give up grilling anytime soon.

All summer long I’ve been firing up my grill and filling it with local veggies, sometimes adding some sausage or chicken as well, and calling it dinner. Nobody has complained, but I recently decided the one thing a platter of grilled vegetables really begs for is a flavorful sauce for dipping. The grilled vegetables almost seem like extra flavorful and colorful French fries once you add a nice aioli to dunk them into.

Who’s ready for spring? I certainly am! After a tease of gorgeous spring weather here in Chattanooga at the end of February, it’s been downright dismal for most of March. So, hi! I’m back from what I think was my longest blogging hiatus ever, and I have really missed you. I have a post coming up soon with details on what I’ve been up to in case you’re interested (spoiler alert: planning our wedding and lots of freelance work!). From now on I’ll be sharing recipes more regularly again, and am really excited to get back in the game with this amazing and super simple recipe from Amanda Torres’ new cookbook, Latin American Paleo Cooking. Amanda is the brilliant recipe developer and writer behind the blog The Curious Coconut, and she wrote the cookbook with her mother in law, Milagros Torres, who grew up in Puerto Rico and has been cooking since she was ten.

The book is full of tempting recipes for family dinners, party food, quick and easy meals, sides, cooking essentials like sauces, and desserts from many different Latin American countries. Since I’m trying to slim down for my wedding (it’s in less than two weeks!), I have not even looked at the dessert chapter. However, I’ve been poring over everything else and have a huge list of what I want to make. Empanadas are at the very top of my list (and the top of the cover of the book–don’t they look amazing?)!

Marinated Jerk Chicken + How to Cook Rice on the Grill

This mango jerk chicken is extra delicious thanks to mango juice in the marinade, and the whole meal is super simple because the rice is cooked on the grill, too!

While it technically won’t be summer for another month, it’s already felt like summer here in Chattanooga for several weeks. Ben and I got the grill set up at our new place, and I’m eager to cook as many meals as possible entirely outside. It’s so much easier to keep the kitchen clean and cool when you make your whole meal on the grill! For this dinner, we’re marinating chicken breasts in jerk seasoning and a generous glug of mango juice, and pairing them with rice cooked on the grill and then mixed with fresh mango, cilantro, and peas.

I always have so much fun shopping at Cost Plus World Market Hamilton Place–since there are so many gourmet food items, beautiful linens, kitchen essentials, and tableware all in one spot, it is pretty hard to get me out of there once I walk in. And of course, they have everything you need for grilling. They’re also often sampling something delicious to sip or nibble on while you shop. If you’re on a summer oven-free streak like me, I have just the meal for you: grilled ribeye steaks, sweet corn, and summer squash, all slathered with a delectable chimichurri butter. This meal is super quick and easy to put together, and if you don’t like or have corn or squash it’s easy to sub in other summer veggies. The chimichurri butter is a creamier version of the world’s best steak condiment, featuring fresh parsley, garlic, oregano, and just a hint of a vinegary tang. You’ll want to melt a pat of it on everything savory that comes off your grill for the rest of summer.

Oh, and the best part? You can get the grass-fed ribeye steaks for this meal for free!

Summer is finally here, almost officially! I’ve already gotten in my first swim and am loving all the summer produce. I am such a summer person that I even enjoy basking in the heat of days that are 90+ degrees and humid–I find it kind of comforting!

Also, it’s BBQ season. To get ready for all the cookouts that are in store this summer, I teamed up with a few of my favorite bloggers to bring you five delicious paleo-friendly recipes that are perfect for summer BBQs. My contribution is this grilled pound cake with lemon curd and berries.

Grilled Pound Cake with Lemon Curd and Berries

Grilled pound cake is the ideal way to end any grilling sesh. You bake the pound cake and make the lemon curd ahead of time, so all you have to do when the dessert hour rolls around is quickly grill the pound cake, spoon the lemon curd onto plates, and add a handful of fresh berries. I used local blackberries, but if strawberries are still in season near you, those would be fabulous, too! Later in the summer I’m looking forward to enjoying this with blueberries.

This pound cake recipe is super simple and comes together in one bowl with just one kind of flour–Otto’s Cassava Flour. It’s a grain-free, gluten-free, nut-free flour that makes paleo baking super easy. The cake is lightly sweetened with maple syrup and flavored with vanilla extract. It’s the perfect foil for tart and creamy lemon curd and juicy summer berries!

Food on a stick is just more fun, right? Especially when there’s bacon involved. These skewers will be the star of your next cookout. Maple syrup, balsamic vinegar, and spices add flavor to the chicken, and the chicken and vegetables are super succulent because they’re nestled in between waves of bacon while they cook. Writing this cookbook was a ton of work, but I’ve never eaten better than I did while working on it! Still others just incorporate exotic flavors into an old classic or provide a fresh twist on a well-loved recipe.

I’ve been wanting to make a rainbow salad for a while now, but this seemed like an especially opportune moment. Summer produce is everywhere in all its resplendent hues, and more Americans are able to get married than ever before. Let’s celebrate with this salad!

This healthy salad has pretty much all the colors of the rainbow (if you kind of merge indigo and violet together) plus pink. Pink is my favorite color and it’s not really fair that it’s not a part of the official rainbow, so I made sure it was included by making a nice pink dressing. Despite how creamy it looks, the dressing is dairy-free–the creaminess comes from the walnuts and shallots, and the color is thanks to the raspberries. It’s inspired by the creamy shallot dressing from my pan-seared chicken, orange, and walnut salad, but this one’s even better because it’s pink.

Lamb burgers are stuffed with manchego cheese and cherry jam for an elegant twist, and served on easy-to-make yeasted paleo burger buns!
 
Last year, my fiancé Ben asked me to make stuffed lamb burgers for his birthday dinner. At that point I had never made a stuffed burger or even cooked with lamb, which I didn’t think I liked. Since it was his birthday, though, I went for it.
Can you see where this story is going? Spoiler alert: the burgers were delicious (and they’re especially delicious on paleo burger buns!). Stuffed burgers are not hard to make, and it turns out I DO like lamb!

I make burgers all the time because they are such an easy, simple dinner, but I usually make them with beef and use butter lettuce for the buns. Upgrading to a lamb burger (and a stuffed one at that!) and making my own paleo burger buns definitely kicked my burger night game up several notches.
These burgers are stuffed with manchego cheese and cherry jam, so you end up with the perfect balance of sweet, salty, and meaty tastes. The strong flavors of lamb pair really well with fruit preserves, and I chose manchego because it’s one of my very favorite cheeses. If you’re avoiding dairy, you can stuff the burgers with just jam and they’ll still be delicious. You could even add some avocado slices on top for extra creaminess. Or, if adding jam to a burger freaks you out, you can stuff them with only the cheese (but I do hope you’ll try the jam at least once!).
