Oatmeal Cookie Energy Bites

February 24, 2020 By Becky Leave a Comment

Oatmeal Cookie Energy Bites (Gluten free, Dairy free)

These cashew butter oatmeal energy bites are quick to make and taste like chocolate chip oatmeal cookies. They’re the perfect gluten-free, dairy-free snack for nursing mamas and anyone else who’s hungry!

I’m popping in on this dreary February day to share a recipe that I’ve been making for over a year now: oatmeal cookie energy bites. These little balls taste like oatmeal cookie dough and are one of the first things I made when I started cooking again after taking time off for Madeline’s birth–although for these, no actual cooking is required!

Gluten-free Financiers with Figs

October 5, 2019 By Becky Leave a Comment

Gluten-free Financiers with Figs made with brown butter and almond flour (Grain free)

These gluten free financiers have a flavorful, tender crumb thanks to brown butter and almond flour, and are studded with fresh figs.

After weeks of sweltering weather with highs in the upper nineties, we’re finally having a “fallish” day here in Chattanooga with highs only reaching the upper eighties. I bake no matter the weather, but feeling a tiny chill in the mornings really makes me eager to turn on the oven. If you’re doing some fall baking this weekend, I highly recommend these gluten-free financiers with figs.

Financiers are a French treat made with brown butter, almond flour, and egg whites. There’s usually a bit of all-purpose flour in there, too, but here I’ve used cassava flour* (*affiliate link–I earn from qualifying purchases. All affiliate links in this post are marked with a *) to keep them gluten free and grain free.

Peanut Butter Chocolate Chip Oatmeal Cookies

May 17, 2019 By Becky 4 Comments

These dairy-free, gluten-free peanut butter chocolate chip oatmeal cookies are easy to make in one bowl and hard to stop eating!

These dairy-free, gluten-free peanut butter chocolate chip oatmeal cookies are easy to make in one bowl and hard to stop eating!

I’m finally sharing the cookies I’ve been making over and over again since shortly after Madeline’s birth. These peanut butter chocolate chip oatmeal cookies are dairy free, gluten free, and super simple to make. If you don’t like or can’t have peanut butter, they’re also amazing with cashew butter, and I bet other nut and seed butters will work, too.

While I wouldn’t call these health food, they do have good amounts of fiber, protein, and healthy fat. As a nursing mom, I love these because the oats help keep my supply up. However, these are not actual lactation cookies since they don’t have anything funky like brewer’s yeast or other ingredients not found in normal cookies that make you raise your eyebrows a little.

Peppermint Blondies (Grain free, Dairy free)

December 20, 2018 By Becky 2 Comments

Peppermint Blondies (Gluten free, Grain free, Dairy free)

These gluten-free peppermint blondies taste like peppermint bark on top of the richest, chewiest blondies. They’re grain free, dairy free, and easy to make with just one bowl.

I’m sneaking in with one more recipe before Christmas! The other day I had the idea to make a peppermint version of my olive oil blondies, and I had to make it happen right away. The olive oil blondies have been my go-to party/potluck dessert for several years now. They’re always a hit and I always get lots of requests for the recipe. And no one has ever been able to taste the olive oil! (Although if you prefer, you can make them with avocado oil instead).

Pumpkin Caramel Cheesecake Pie (Gluten-free, No-bake)

November 19, 2018 By Becky 8 Comments

This pumpkin caramel cheesecake pie requires no cooking, and all the layers are made in the food processor with no need to wash it in between. It’s the perfect last-minute Thanksgiving dessert! This pie was originally published in fall of 2013. I’ve tweaked the recipe and updated the photos.

This pie is so easy, and so good!  If you already have your caramel sauce made (try salted caramel, salted maple caramel, or even store-bought), there is no cooking required–just a few rounds of food processing.  And, in case you need another reason to make this, there’s pumpkin involved!  There’s also caramel, whipped cream, and a delicious two-ingredient crust.  The cheesecake layer is rich, but not overpowering–I think even people who don’t love cheesecake will probably love this.

Gluten-free Pumpkin Sheet Cake

October 26, 2018 By Becky 2 Comments

Gluten-free Pumpkin Sheet Cake

This easy gluten-free pumpkin sheet cake with whipped cream frosting is the ideal dessert to feed a crowd at Halloween or Thanksgiving.

My most perpetual pregnancy craving has been and continues to be cake. Last week I was desperate for some, and became fixated on making a sheet cake. Sheet cakes are really the best kind when you’re baking to satisfy a craving. Why? They’re huge and fast. There’s no need to prep more than one pan or stack and fill layers. It’s a snap to make them look nice with no piping. They also bake and cool super quickly because they just have one relatively thin layer.

Easy Grain-free Skillet Cookie

September 8, 2018 By Becky 14 Comments

Easy Grain-free Skillet Cookie

This gooey grain-free skillet cookie is super easy to mix up right in the pan–no bowl required! What are you waiting for?

Something about September makes me crave chocolate chip cookies. It still feels a bit early for apples and pumpkins, but something warm and sweet and chocolatey sounds about right. If you feel the same way, this easy grain-free skillet cookie will be just the ticket.

The best thing about this skillet cookie, other than how wonderful it tastes (especially with a scoop of vanilla ice cream on top), is how simple it is to make. You don’t even need a bowl–we’re doing everything right in the skillet, with one spatula or mixing implement of your choice.

Brown Butter Turmeric Chocolate Chip Cookies

August 17, 2018 By Becky 4 Comments

Get your turmeric fix in cookie form with these vibrant, grain-free brown butter turmeric chocolate chip cookies!

I’m super excited to share these unique cookies with you today! They’re inspired by the beautiful golden hue of the tea towel in the pictures, which was naturally dyed with turmeric by my friend Maggie Pate. Her first book, The Natural Colors Cookbook, just came out this summer and is packed with easy recipes for using food and food waste to dye all kinds of fabrics and fibers the prettiest shades of pink, purple, yellow, orange, blue, and green.

Grain-free Instant Pot Pumpkin Pie

This grain-free Instant pot pumpkin pie is easy to make in your pressure cooker, and is the perfect size for an intimate holiday gathering. Recipe from Emily Sunwell-Vidaurri’s new cookbook, The Art of Great Cooking with Your Instant Pot.

It’s time for an Instant Pot dessert! I recently took a little poll over on Instagram stories, and found that 74% of you have an Instant Pot. If you’re among the 26% that doesn’t have one yet, you should add it to your Christmas list–it’s my very favorite kitchen appliance of all time because of its cooking speed, ease of use, and versatility. It sautés beautifully, plus it does the work of a slow cooker, rice cooker, pressure cooker, and more. And now, we’re using it as a pie maker!
