These gluten free financiers have a flavorful, tender crumb thanks to brown butter and almond flour, and are studded with fresh figs.

After weeks of sweltering weather with highs in the upper nineties, we’re finally having a “fallish” day here in Chattanooga with highs only reaching the upper eighties. I bake no matter the weather, but feeling a tiny chill in the mornings really makes me eager to turn on the oven. If you’re doing some fall baking this weekend, I highly recommend these gluten-free financiers with figs.

Financiers are a French treat made with brown butter, almond flour, and egg whites. There’s usually a bit of all-purpose flour in there, too, but here I’ve used cassava flour* (*affiliate link–I earn from qualifying purchases. All affiliate links in this post are marked with a *) to keep them gluten free and grain free.

Something about September makes me crave chocolate chip cookies. It still feels a bit early for apples and pumpkins, but something warm and sweet and chocolatey sounds about right. If you feel the same way, this easy grain-free skillet cookie will be just the ticket.

The best thing about this skillet cookie, other than how wonderful it tastes (especially with a scoop of vanilla ice cream on top), is how simple it is to make. You don’t even need a bowl–we’re doing everything right in the skillet, with one spatula or mixing implement of your choice.

Grain-free Triple Lemon Layer Cake with Whipped Cream Frosting

This grain-free lemon cake with whipped cream frosting is made for Easter dinner, spring birthdays, or any other special occasion. It’s super lemony thanks to lemon zest, juice, curd, and extract!

It’s the roughest Monday of the year, but I brought cake to ease the pain! If springing forward has taken some of the pep out of your step, this grain-free lemon cake will put it right back in.

When my future sister-in-law asked for a lemon cake to celebrate her birthday, I was excited. A few months ago for a styled wedding shoot, my friend Lindsey and I made a lemon layer cake with blood orange curd and blood oranges on top. I’d been wanting to try something similar with a lemon curd filling, and this was the perfect opportunity. For this cake, I adapted my lemon olive oil Bundt cake recipe to create two round layers. (Before you can even ask, no, you can’t taste the olive oil! It’s just a super healthy, easy to work with fat for baking that creates a wonderfully tender crumb.)

Grain-free Triple Lemon Layer Cake with Whipped Cream Frosting

I used homemade lemon curd for the filling, and then frosted and decorated the cake with stabilized whipped cream. The result is a festive, richly lemon-flavored cake with tart curd and pillowy clouds of cream. It’s so good, and was a huge hit with my entire family, including my three young future nieces. I can’t wait to make it again next month for Easter!

Grain-free Spiced Chocolate Torte

This grain-free spiced chocolate torte is a great to end a festive dinner. It will satisfy any chocolate lover, but also has a delectable hint of spice.

Thanksgiving is over, and I’m planning to top everything with pomegranate arils from now until the end of the year. This grain-free spiced chocolate torte, of course, is no exception.

I love using warming spices like cinnamon and cardamom to make desserts smell and taste extra festive during the holiday season. However, I’m also a huge lover of chocolate. I didn’t want to choose between my love of chocolate and my love of a little seasonal spice, so I decided to combine the two into a spiced chocolate torte.

Grain-free Spiced Chocolate Torte

This torte has a perfect texture and crumb thanks to a combination of almond flour and tapioca flour from Bob’s Red Mill. Those two flours are my go-to for grain-free baking year round. The almond flour, which is made of whole, blanched sweet almonds, provides the tenderness and richness that every torte needs. And since Bob’s Red Mill almond flour is super finely ground, there’s no need to sift it before using! As an extra bonus, almonds are packed with healthy monounsaturated fats and protein, but are low in carbohydrates (and are naturally gluten free).

I’ve cracked the code on paleo naan! This grain-free flatbread is soft and chewy just like its gluten-laden counterparts, and thanks to the yeast, its flavor is really authentic. I’m actually a little bit worried about having figured out this recipe, because I now want it with every single meal. It’s going to take a lot of restraint to not just eat this instead of vegetables!
 
I’d never considered making a yeasted paleo flatbread before, partly because yeast can be time-consuming and partly because I had heard that gluten-free doughs don’t rise as well. And while that may be true, I was pretty excited about how well this dough rose (see the photos near the end of the post for evidence). Also, since this bread just needs one quick, 45-minute rise, it’s not totally insane to make on a weeknight.

I got the idea for this bread when I saw Heather’s perfect paleo flatbread recipe on Cook It Up Paleo. Her recipe calls for yeast, but doesn’t have you wait for the dough to rise. I couldn’t try her recipe as-is because it calls for coconut flour (I’m allergic to coconut), so I decided to play around with it a bit.

You’re less than ten minutes away from a scrumptious, grain-free matcha mug cake! It’s paleo friendly, dairy free, and sweetened with honey or maple syrup.

Happy St. Patrick’s Day! I made you a matcha mug cake. It’s not at all Irish, but at least it’s green!
I was excited to make something green for St. Patty’s Day, but I don’t like to use artificial coloring in my food. Since I had my heart set on making a dessert, using spinach or kale as coloring agents didn’t seem very appealing. Matcha was the perfect solution.

If you haven’t discovered matcha yet, I highly recommend it! It’s just very finely ground green tea leaves, so it has a bit of caffeine and all the great antioxidants contained in green tea. The flavor is hard to describe, but it’s exotic and a bit earthy. Matcha is delicious on its own in desserts, but also pairs well with chocolate. I’ve made this matcha mug cake with and without chocolate chips and still can’t decide which one I prefer.

Sparkling Sandwich Cookies (Vegan, Gluten-free, Paleo)

I subscribed to Gourmet Magazine when it was still being published, and looked forward to getting it every month.  The cover photographs were always stunning, but the December 2008 cover really stuck with me.  The theme was cookies, and eight different gorgeous recipes were featured on the cover in different parts of the country.  I got the one with these glittering lemon sandwich cookies on it, and now, five years later, I finally got around to making my own version.
These sparkling cookies are vegan, paleo, gluten-free, and perfect for New Year’s Eve.  They’re also the most adorable cookies I’ve ever laid eyes on.  The cookies are richly flavored thanks to the almond flour and lemon zest, and the sugar coating provides the perfect amount of crunch.  I was planning to make the lemon filling from Gourmet’s recipe, but I got lazy, and instead pulled out jars of raspberry jam and dulce de leche.  The tiniest amount sticks the cookies together, and provides the extra bit of sweetness that makes these sandwiches irresistible.  Also, they kind of look like miniature hamburgers!  How can you say no to that?

Paleo Flour Blend Recipe

This easy-to-make paleo flour blend works beautifully as a cup-for-cup replacement  for all-purpose flour in many dessert recipes!

Are you as addicted to baking as I am?  Are you also, like me, trying to eat healthier food without spending all day and night in the kitchen?  This paleo flour blend is for you.  When you bake grain-free, you can make delicious treats without all the guilt and gluten.  

When I stay gluten-free, I have more energy and fewer tummy problems.  Even if you’re not technically gluten-intolerant, you may still feel better without it!  I also bet your hips will thank you.

To save time in the kitchen, this flour blend creates a one-stop-shop for gluten-free baking: you measure once and get the benefits of three grain-free flours in precise balance with each other.  If you haven’t tried baking without grains yet, whip up a batch of this flour blend!  Then start experimenting, and see who you can fool.  I bet you’ll be hearing, “I can’t believe this is gluten-free!” in no time.

I like to make my baked goods with a combination of almond flour, tapioca starch (also known as tapioca flour), and coconut flour. The almond flour lends flavor and richness, the tapioca starch adds lightness and helps with browning, and the coconut flour helps achieve a cake-like texture.  

I’ve been experimenting with the best ratio for these three flours, and have settled upon 3:2:1–three parts almond flour, 2 parts tapioca starch, and 1 part coconut flour.

Once you have the right quantities, the next step is to sift the three flours together to make a blend, so that you only need to measure my flour once to make a recipe.  You can of course make any amount of this flour blend by following the 3:2:1 ratio; the recipe below will make about four cups.

You can start by using this flour blend in these molten chocolate cakes (pictured above)–just use 6 tablespoons of the blend instead of the smaller quantities of each type of flour. Next you can use it in these Mexican brownies!

I’m experimenting with substituting this flour blend cup-for-cup for all-purpose flour in regular recipes, and will update this post to reflect which recipes I’ve had success with.  I can’t guarantee that this will be an effective flour substitute in every case, but it’s a great place to start.  If this blend works for you with a particular recipe, leave a comment with a link below so others can try it, too!

Update: I used this blend instead of all-purpose flour in this blondie recipe from Smitten Kitchen with great results!  I also used coconut sugar instead of brown sugar, but other than that I followed the recipe exactly.

Note: I haven’t tested substitutions for this recipe, but some readers have, so try searching the comments if you have a question!
