Caprese Frittata

This caprese frittata is a fast and delicious way to showcase summer’s bounty. It’s just as welcome for dinner as for breakfast!

My theme this week is caprese everything. These delicious tomatoes and basil from Big Sycamore Farm were just begging to be paired up with some fresh mozzarella and turned into all sorts of caprese things. The other night I made a classic caprese salad, then last night I made caprese sandwiches that were devoured before they could be photographed. And this morning I woke up with a hankering for a caprese frittata.

Grilled Pork Chops and Peaches

You’re less than 30 minutes away from this healthy paleo meal of spice-rubbed pork chops and grilled peaches served with bitter greens and avocado.

 
How was your weekend? Whether or not it was a long one, I hope it included lots of time spent doing your favorite things. Mine did: I spent time cooking, baking, swimming, sleeping in, and eating burgers. I couldn’t have asked for much more!
 
It’s been about two weeks since Ben and I moved to Chattanooga, and I’m so happy to be here. I’ve only had three full days of work so far, so it’s all felt a bit like a giant vacation. We’re staying with my future sister-in-law and her husband and my three future nieces, and they are all so much fun. The girls are eight, six, and three years old, and make me want to have my own children YESTERDAY. They love to help me cook, which is a welcome change since so often I’m alone in the kitchen.

On Friday we made chocolate pudding. I’d made the recipe before (I just substitute tapioca flour for the cornstarch to make it grain-free) and knew it only made 6 servings, but figured we could stretch it to feed 7, 3 of whom are not full grown. Right when the girls and I had finished the pudding and were looking for cute little cups to put it in, Ben announced that his parents and brother would also be joining us for dinner. That raised the total count to 10.
 
Faced with the fear of not enough dessert, the girls suggested another batch of these brownies (similar recipe here–omit the cinnamon and cayenne and add a handful of chocolate chips for a kid-friendly, double chocolate version). I agreed. After baking the brownies, we spread our meager stash of chocolate pudding on top like frosting, added a layer of whipped cream, and sprinkled some more chocolate chips on top for good measure. The result was something so decadent that the eight year-old, who prides herself on usually being able to eat several servings of dessert, was satisfied after just one. When it follows the fear of not enough dessert, too much dessert is a wonderful thing indeed! The pudding brownies lasted for days in the fridge and made excellent snacks throughout the weekend.

Stuffed Lamb Burgers + Paleo Burger Buns

Lamb burgers are stuffed with manchego cheese and cherry jam for an elegant twist, and served on easy-to-make yeasted paleo burger buns!
 
Last year, my fiancé Ben asked me to make stuffed lamb burgers for his birthday dinner. At that point I had never made a stuffed burger or even cooked with lamb, which I didn’t think I liked. Since it was his birthday, though, I went for it.
Can you see where this story is going? Spoiler alert: the burgers were delicious (and they’re especially delicious on paleo burger buns!). Stuffed burgers are not hard to make, and it turns out I DO like lamb!

I make burgers all the time because they are such an easy, simple dinner, but I usually make them with beef and use butter lettuce for the buns. Upgrading to a lamb burger (and a stuffed one at that!) and making my own paleo burger buns definitely kicked my burger night game up several notches.
These burgers are stuffed with manchego cheese and cherry jam, so you end up with the perfect balance of sweet, salty, and meaty tastes. The strong flavors of lamb pair really well with fruit preserves, and I chose manchego because it’s one of my very favorite cheeses. If you’re avoiding dairy, you can stuff the burgers with just jam and they’ll still be delicious. You could even add some avocado slices on top for extra creaminess. Or, if adding jam to a burger freaks you out, you can stuff them with only the cheese (but I do hope you’ll try the jam at least once!).

Balsamic Steak with Fig & Arugula Salad

Do you think beautiful food tastes better? I do.

Of course, every once in a while you come across a beautiful dish, take your first bite, and feel disappointed because it doesn’t taste nearly as good as it looks. In my experience, though, that doesn’t happen much.

More often, a food’s level of beauty and deliciousness are relatively close together, with the gorgeousness boosting the deliciousness up a notch or two (or perhaps vice versa, but I don’t really find that a food looks prettier once I’ve tried it and know that it’s tasty…we eat with our eyes first, after all). The food looks good, so it tastes even better. I think that’s how it goes with me and figs. Yes, they’re yummy, but most of all, their colors are just so pretty. When I take a bite of fig while looking at the freshly-sliced figs that are still on my plate, the beauty of those figs makes the one in my mouth taste even better.

Bacon, Arugula, & Avocado Salad with Sherry Vinaigrette (Gluten free, Paleo)

This quick and easy bacon, arugula, and avocado salad is packed with flavor and tossed with a sherry vinaigrette that’s amazing on almost anything.

My last post was about inspiration, and this one is about exhaustion.  Not the discouraging kind of exhaustion that makes you feel like there’s no end in sight, but the kind of exhaustion that leaves you cheerfully spent at the end of the day–content, but without much left to offer.

I started my first external placement for graduate school last week, and I’m in schools working with kids and teachers four days a week for ten hours a day.  (In case you haven’t heard me mention it, I’m working on a master’s in speech and language pathology with dual certification as a reading specialist).  I am learning and doing so much that I do not know where to put all my thoughts and ideas.  I have plenty of notebooks and folders, but there’s not enough space and time to capture everything I want to hold onto.  Do you ever feel that way?  Please tell me about your own exhaustion in the comments so I can feel a little less alone!

Blackberry, Almond, and Rocket Salad with Fresh Mozzarella

Did you know that arugula is called rocket in the UK?  Arugula is a pretty fun word, but rocket is even better.  This salad has rocket in it, along with all the other delicious things listed in the title.  After making blackberry cupcakes for this month’s Get Your Chef On challenge, I wanted to do something else fabulous with the rest of my juicy blackberries.  I dreamed up this salad, and thought about it all day during class.

I was happy to find that it was even better than I had imagined!  The spicy arugula, sweet blackberries, creamy mozzarella, and toasty almonds are the perfect combination.  This is my new favorite summer salad.  Ben loved it, too!  When I served it he said it looked fancy (secret–any salad with blackberries looks fancy!), and then he asked for seconds.  Usually he’s a one plate of salad kind of guy.

So, here’s what I would recommend.  Go buy a lot of blackberries, make these cupcakes, then make this salad.  A light dinner with a decadent dessert is the perfect thing to have on a summer evening.

Ingredients (serves 2):

1/2 cup sliced almonds
3 cups arugula
2 teaspoons olive oil
1 teaspoon balsamic vinegar
Pinch of sea salt
1 heaping cup blackberries
4 ounces fresh mozzarella, roughly cubed

Toast the almonds in a dry skillet over medium heat, stirring often to make sure they don’t burn, until golden brown (less than five minutes).  Set aside to cool.

Toss the arugula with the oil, vinegar, and salt and adjust seasonings to taste.

To serve, line plate with arugula.  Top with blackberries, fresh mozzarella, and toasted almonds.  Enjoy!
