Instant Pot Balsamic Short Ribs with Parsnip Puree

These Instant Pot balsamic short ribs are easy to make and the epitome of winter comfort food, plus they’re dairy free, paleo, and Whole30 compliant!

Shooooort ribs! I remember the first time I ordered them, at a restaurant in Jamaica Plain on New Year’s Eve in 2011. I said to the waiter, “So short ribs are pork, right?” 😂

I’ve learned a lot about short ribs since first falling in love with them almost a decade ago. To begin with, they’re beef! Also, they’re one of the richest, most tender cuts you’ll find, and are best slow cooked or braised. This strawberry panna cotta with balsamic vinegar is an easy but gourmet spring dessert. With dairy-free and paleo-friendly options, more people can enjoy it!

Are you thrown off by the idea of vinegar in a dessert? Don’t go away yet–let me explain. First of all, you won’t actually taste the balsamic vinegar in this strawberry panna cotta unless you decide to drizzle extra on top to serve. Second, balsamic pairs really well with strawberries, enhancing their flavor and sweetness without asserting its own taste in any noticeable way.

Years ago when I was living in Houston, I threw one of my first dinner parties. I think everything I made that night was from the first cookbook I ever bought myself, Ina Garten’s Barefoot Contessa Back to Basics. A friend of a friend brought vanilla ice cream for dessert, along with a bottle of chocolate balsamic vinegar. He explained that he’d been to a vinegar tasting, and had learned about how balsamic can enhance desserts. Although skeptical, I drizzled a bit of the heady syrup onto my ice cream, and was totally blown away. The tang of the vinegar made all the other flavors in the dessert pop in the best possible way. I was sold.

Slow-Cooker Balsamic Short Ribs with Parsnip Puree

These tender slow-cooker balsamic short ribs are so comforting, with great flavor from the balsamic vinegar and rosemary. Serve them over parsnip puree with a simple vegetable side, like seared radicchio or quickly sautéed kale.

Who’s ready for part four of my ongoing love letter to short ribs? If you missed them, check out parts one, two, and three (plus the honey chipotle short ribs in Paleo Planet!). I love short ribs because they’re meltingly tender, full of meaty flavor, and really hard to mess up. They’re super easy to make in the slow cooker, and they go well with a wide variety of flavor profiles.

In this simple recipe, short ribs are cooked low and slow with plenty of balsamic vinegar and fresh rosemary for the perfect fall comfort food with an Italian bent.

Slow-Cooker Balsamic Short Ribs with Parsnip Puree

To round out the meal, I like to serve these slow-cooker balsamic short ribs with an extra creamy (but cream-free!) parsnip puree. Parsnips are such a fun cold weather vegetable and they taste great as a puree–the flavor is beguiling and almost has hints of coconut to it.

Maple Balsamic Chicken and Bacon Skewers

 Chicken and bacon skewers are sure to become your next grilling obsession! These easy skewers feature chicken with a maple balsamic glaze, zucchini, summer squash, and peppers woven together with bacon.  This post is sponsored by Santa Rita.

Food on a stick is just more fun, right? Especially when there’s bacon involved. These skewers will be the star of your next cookout. Maple syrup, balsamic vinegar, and spices add flavor to the chicken, and the chicken and vegetables are super succulent because they’re nestled in between waves of bacon while they cook. Balsamic Chicken with Mushrooms

I love to read.  It’s actually somewhat of a problem.

Whenever I read fiction or a memoir, one of two things happens.  I either put the book down because I can’t get into it, or I’m so into it that I can’t think about anything else, and end up reading the whole thing within a day or two.  The latter happens much more frequently than the former, and everything else I’m supposed to be doing falls by the wayside.  I fall into reading rabbit holes so easily that I usually don’t allow myself to read anything other than my school textbooks during the semester itself.  (Of course, I’m very interested in speech and language pathology, but books with titles like Understanding Voice Problems and Preclinical Speech Science never really end up being page-turners.  Instead of keeping me up all night like a suspenseful novel, they’re uniquely capable of sending me into a sudden nap if I read them anytime after the sun sets.)

Figs & Pancetta

This simple appetizer is an amazing way to showcase some delicious figs.  I’d been wanting to wrap figs in prosciutto for a while now, but accidentally got slices of pancetta instead.  I think in my mind I’d filed them as being the same thing.  I did a little research and it seems like pancetta is thicker and less pliable, and cured with more spices than prosciutto.  You can use either one here–prosciutto would probably be easier to wrap around the figs, and you might not even need the toothpicks.

Blackberry, Almond, and Rocket Salad with Fresh Mozzarella

Did you know that arugula is called rocket in the UK?  Arugula is a pretty fun word, but rocket is even better.  This salad has rocket in it, along with all the other delicious things listed in the title.  After making blackberry cupcakes for this month’s Get Your Chef On challenge, I wanted to do something else fabulous with the rest of my juicy blackberries.  I dreamed up this salad, and thought about it all day during class.

I was happy to find that it was even better than I had imagined!  The spicy arugula, sweet blackberries, creamy mozzarella, and toasty almonds are the perfect combination.  This is my new favorite summer salad.  Ben loved it, too!  When I served it he said it looked fancy (secret–any salad with blackberries looks fancy!), and then he asked for seconds.  Usually he’s a one plate of salad kind of guy.

So, here’s what I would recommend.  Go buy a lot of blackberries, make these cupcakes, then make this salad.  A light dinner with a decadent dessert is the perfect thing to have on a summer evening.

Ingredients (serves 2):

1/2 cup sliced almonds
3 cups arugula
2 teaspoons olive oil
1 teaspoon balsamic vinegar
Pinch of sea salt
1 heaping cup blackberries
4 ounces fresh mozzarella, roughly cubed

Toast the almonds in a dry skillet over medium heat, stirring often to make sure they don’t burn, until golden brown (less than five minutes).  Set aside to cool.

Toss the arugula with the oil, vinegar, and salt and adjust seasonings to taste.

To serve, line plate with arugula.  Top with blackberries, fresh mozzarella, and toasted almonds.  Enjoy!
