Pitaya Peach Smoothie

Pitaya Peach Smoothie (Paleo, Vegan friendly)

This pitaya peach smoothie has quickly become my go-to power breakfast because it’s easy, healthy, gorgeous, and delicious. What more can you ask for in the morning?

Thank you to Rodelle for providing products for use in this post!

Big news: Ben and I are married! We started dating almost six years ago, before the idea of starting a food blog had even crossed my mind, got engaged almost three years ago, and tied the knot on Saturday. I’m so happy and in a way amazed that we are finally married, mostly because we’re not the best at planning big events. However, we somehow pulled it off (with a huge amount of help from our families and especially my mother, who put together all the little decorative elements and details into something better than I’d ever imagined) and are so thrilled to be husband and wife. Also, Ben’s sister and her husband threw us an outdoor rehearsal dinner that was so fun I worried the wedding itself couldn’t top it, complete with a gorgeously decorated tent in their driveway and a late-night fire pit. I could go on and on about our wedding weekend, but should probably save it for a separate post since I also have lots to say about these smoothies. If you’re interested, though, here are a couple of photos from our first look shot by my dear friend, bridesmaid, and photographer extraordinaire Lindsey Lowe.

Pitaya Peach Smoothie (Paleo, Vegan friendly)

So, smoothie time! I have been making smoothies all spring and summer long, and this pitaya peach smoothie is my very favorite. I shot a cookbook written by someone else this summer (more details coming!) for the first time, and had 60 photos due just over two weeks before my wedding date. As if photographing a cookbook and planning a wedding wasn’t enough, I also continued to work 30 hours a week as a speech therapist and took on several other freelance projects. To say I didn’t have time to cook breakfast would be an understatement. This is such an easy breakfast, especially if you use an immersion blender like I do–you can make your smoothie in a big jar and drink it from there, too!

Strawberry Panna Cotta with Balsamic Vinegar

Strawberry Panna Cotta with Balsamic Vinegar (Paleo and dairy-free options)

This strawberry panna cotta with balsamic vinegar is an easy but gourmet spring dessert. With dairy-free and paleo-friendly options, more people can enjoy it!

Are you thrown off by the idea of vinegar in a dessert? Don’t go away yet–let me explain. First of all, you won’t actually taste the balsamic vinegar in this strawberry panna cotta unless you decide to drizzle extra on top to serve. Second, balsamic pairs really well with strawberries, enhancing their flavor and sweetness without asserting its own taste in any noticeable way.

Strawberry Panna Cotta with Balsamic Vinegar (Paleo and dairy-free options)

Years ago when I was living in Houston, I threw one of my first dinner parties. I think everything I made that night was from the first cookbook I ever bought myself, Ina Garten’s Barefoot Contessa Back to Basics. A friend of a friend brought vanilla ice cream for dessert, along with a bottle of chocolate balsamic vinegar. He explained that he’d been to a vinegar tasting, and had learned about how balsamic can enhance desserts. Although skeptical, I drizzled a bit of the heady syrup onto my ice cream, and was totally blown away. The tang of the vinegar made all the other flavors in the dessert pop in the best possible way. I was sold.

Chocolate Peppermint Sandwich Cookies

December 5, 2016 By Becky 8 Comments

Chocolate Peppermint Sandwich Cookies (Grain free)

These festive, grain-free chocolate peppermint sandwich cookies are just the thing for gifting, cookie swapping, and plain old snacking from now until the new year.

Looking for an adorable, two-bite cookie to enjoy and share this holiday season? I got you covered. I took a look at the cutest cookies from my archives, 2013’s sparkling sandwich cookies, and gave them a chocolate peppermint upgrade. The resulting chocolate peppermint sandwich cookies pack a lot of joy and holiday cheer into one tiny, almost-spherical package.

Chocolate Peppermint Sandwich Cookies (Grain free)

The cookie base here is super simple, made with just almond flour, Rodelle‘s baking cocoa and vanilla extract, butter, honey, and a touch of salt and baking soda. Rodelle’s cocoa has a rich aroma and great depth of flavor that makes it my very favorite cocoa for baking (and for turning the occasional morning coffee into a makeshift mocha). I also like to add a tiny bit of espresso powder to further deepen the chocolate flavor, but you can leave that out if you prefer.

There are no eggs in sight and of course no grains either, which make these cookies ideal for sharing with friends and family with food allergies and sensitivities. (Interested in a dairy-free version? The cookies should work with coconut oil instead of butter, and you could try sustainably-sourced palm shortening or vegan butter in the frosting.)

Vanilla Bean Cheesecakes with Figs and Raspberries

August 25, 2016 By Becky 8 Comments

Vanilla Bean Cheesecakes with Figs and Raspberries

These vanilla bean cheesecakes with figs and raspberries require no grains, dairy, eggs, or cooking! They’re the ideal cold sweet treat for the end of summer. Thank you to Rodelle for providing products for this recipe!

I’m back, and I brought mini cheesecakes! Vanilla bean mini cheesecakes made with cashews and topped with fresh figs and raspberries, that is. And you don’t even need to cook or bake anything! These little cheesecakes are so satisfying on a summer evening. The no-bake crust is just sweet enough, with a hint of chocolate and an almondy crunch, and the cheesecake layer is super-smooth and studded with vanilla bean seeds. On top are fresh raspberries and figs sitting like frosted jewels. The combination is so addictive that I know these will vanish from your freezer just as fast as they did from mine!

Vanilla Bean Cheesecakes with Figs and Raspberries

Here’s how these vanilla bean cheesecakes come together. First, you need to soak your cashews in hot water for an hour and soak the pitted dates in hot water for at least fifteen minutes. (Want to soak all your stuff the same amount of time? A little extra won’t hurt the dates!) Then, you’re going to pulse dates, almonds, and a little bit of cocoa in the food processor to make the crust. The chocolate isn’t a dominant flavor, but gives the crust a little extra something. I don’t like it when my desserts taste too much like dates, and the cocoa also helps mask that flavor a bit. You grease a muffin tin, line the cups with a little parchment paper handle like in the photo below, and pat a dollop of crust right into each cup.

Strawberry-Peach Crisp with Hazelnut-Pepita Crumble

This gluten-free strawberry-peach crisp is lightly sweetened with maple syrup
and topped with a rich crumble made with hazelnut flour and pumpkin seeds.

Hello from Chattanooga, our new home! Ben and I packed everything up and drove from Boston to Tennessee across two days, arriving last night a little after midnight. I’m in love with my new city, which is Ben’s hometown, already. So far we’ve driven around a bit looking at houses, and had amazing burgers at Main Street Meats (see my bunless burger on Insta!). We’re also dogsitting for Ben’s sister, so I get to spend time with this guy.

I spent a while editing the photos of this fabulous strawberry-peach crisp with hazelnut-pepita crumble today. The photographs make me a little sad, because this was the last photo shoot I did in our apartment in Boston, where I’ve taken all the photos for the blog so far and all the photos for my cookbook, Paleo Planet. I hope our next apartment has light that I like just as much!

Anyway, enough wistful reminiscing about the natural light at my old apartment. We’re talking crisp today! I had some good-looking strawberries and peaches, but wanted to do more than just eat them. In part because I was trying to avoid packing, I decided to bake. (Yes, when I’m feeling stressed, I avoid whatever I’m worried about and bake instead. No, my fiancé has never complained!)

I put the freshly cut fruit right into the greased baking dish and added a little maple syrup, a tiny bit of tapioca flour to keep the juices under control, and a pinch of salt and the seeds of half a vanilla bean to bring out the natural sweetness of the fruit. I mixed it all together right in the dish to avoid having to wash an extra bowl. (I did have to wash the bowl I made the crumble in, but that’s it for this recipe: one bowl + the baking dish).

Cashew Chia Cacao Nib Pudding

July 3, 2015 By Becky 30 Comments

This cashew chia cacao nib pudding is paleo, gluten-free, and easily made vegan. It’s also a snap to make and surprisingly satisfying!

Happy fourth of July weekend! I made you a healthy dessert packed with superfoods: chia seeds, cacao nibs, honey, and cashews. Well, I am not totally sure that honey and cashews are superfoods, but they’re not bad, right? I think this pudding would be a welcome change on a weekend when desserts are often pumped full of artificial colors and flavors. (Although, if you do need something naturally red, white, and blue, may I suggest my pico de gallo de frutas? Just use blueberries instead of kiwis.)

Since this pudding is a make-ahead dessert, it’s perfect for having guests over. While you’re out grilling lamb burgers and mixing drinks (agua fresca, perhaps?) these perfectly-sized treats will just be gelling in the fridge.

This was my first time using chia seeds and cacao nibs, and I loved them both. I wasn’t sure how I’d feel about the cacao nibs since they’re unsweetened chocolate, but while I wouldn’t necessarily eat a handful plain, they were perfect in this pudding. Some of the cacao nibs are blended with the cashew and chia base to deepen the chocolate flavors of the entire pudding, and some are sprinkled whole on top. This gives each bite of cashew chia pudding this craveworthy chocolatey crunch. It’s so good! Read More…

Salted Maple Caramel Peach Bars (Gluten free, Paleo)

August 20, 2013 By Becky Leave a Comment

When I decided to try the paleo lifestyle, one of my main concerns was whether I would still be able to have salted caramel.  Salted caramel is an essential dessert flavor, one that I believe deserves a place right up there with chocolate and vanilla.  If there wasn’t a way to make paleo salted caramel, I wasn’t sure I’d be able to handle it.
