You only need two ingredients to make these bacon-wrapped potato wedges, and they’re perfect paleo football food!

It’s football season! Are you into it? I have no idea what’s going on, but my fiancé Ben is a big Broncos fan and is also in a fantasy football league. It’s my job to complain about how much the TV is on and to make delicious snacks, like these bacon-wrapped potato wedges.

We moved this past weekend–we’d been staying with Ben’s sister and her family, and now we’re renting a little guest house from some friends of ours while we look for a house to buy. The guest house is just two rooms plus a bathroom, but it’s really cute. The kitchen and living area are in one room, but it’s a pretty good size and I’m really happy with the kitchen area. Unfortunately, the TV is right nearby, so I have to listen to football while I cook.

Since things have been pretty hectic with our move from Boston to Chattanooga last month and our mini move into the guest house more recently, I’ve been on the lookout for easy recipes. I was assigned Rebekah’s blog, Making Miracles, for this month’s Secret Recipe Club, and found so many great possibilities in her recipe index. Her blog is full of fast, easy, family-friendly recipes, and I highly recommend you check it out!

I was planning to make her baked paleo chicken tenders, since I loved chicken fingers as a kid and haven’t yet tried making a paleo version. In fact, I’m still planning to make them–I have all the ingredients and everything–but once I saw these bacon-wrapped potato wedges, they jumped to the top of my list. I had to have them right away.

Spiced beef and sweet potato bowls with crispy eggs, fresh figs, and goat cheese: a unique and satisfying grain-free breakfast or dinner in less than 30 minutes.

This may seem like a strange combination of foods, but don’t knock it ’til you’ve tried it. This quick spiced beef with sweet potatoes is delicious all on its own, but adding a crispy egg, a few fresh figs, and a generous dollop of goat cheese kicks things up several levels.

The spiced beef and sweet potatoes is a fast, pared-down version of my bacon and sweet potato chili, with a few slightly more exotic spices added in. Microwaving the sweet potato chunks for a few minutes while the meat is browning saves times and ensures even cooking. Coriander, turmeric, cardamom, and allspice give the beef and sweet potatoes just the right amount of fragrance and spice.

Dairy free, paleo apple honey upside-down cake is perfect for cool fall days. Subtly spiced and not too sweet, it’s great for breakfast or dessert!

The tradition of dipping apples in honey to celebrate Rosh Hashanah inspired me to bake this apple honey upside-down cake. Apples and honey represent the double dose of sweetness that’s hoped for in the year ahead. I didn’t get this post ready in time to share before the holiday, but this cake is an ideal dessert for anytime in the fall. Whether or not you celebrate Rosh Hashanah, everyone can use a little extra hint of sweetness as the air turns crisp and the nights begin to fall sooner.

 
I based this recipe on my lemon olive oil cake, which is a dessert I’ve made again and again for all sorts of occasions. This apple honey upside-down cake is the perfect fall twist on my go-to cake.

To make this cake, I poured copious amounts of honey into the bottom of a parchment-lined pan, and then arranged apple slices on top. Since the apples and honey are so sweet, I only used a tiny bit of sweetener in the cake batter itself, and included a few hints of savory flavors to balance things out. Using extra virgin olive oil instead of butter makes the cake dairy free and provides a complexity that keeps the cake from being pure, unadulterated sweetness. And ginger and cardamom, spices that play on both the sweet and savory teams, are a welcome change from the usual cinnamon.

Have you ever smashed a potato? If not, you’re missing out. It’s an easy and fun way to get roasted potatoes that are actually crispy, and shaped like beautifully abstract flowers to boot.I saw this smashed potatoes idea over on Oh She Glows about a year ago, pinned it enthusiastically, thought about it often, and didn’t actually try it until last week. That’s one of the perils of reading as many food blogs as I do: there are so many great recipes to try, and so little time!

These smashed potatoes are going into the regular rotation, though. I’m going to offer a brief explanation of why they’re better than plain old roasted potatoes (which are pretty delicious to begin with). When you roast whole small potatoes, only a very small portion of their surface area comes into contact with the hot pan below, and they don’t have any jagged edges elsewhere to crisp up. Thus, it’s really only a tiny spot on the bottom that becomes sufficiently crunchy.

You’re less than 30 minutes away from this healthy paleo meal of spice-rubbed pork chops and grilled peaches served with bitter greens and avocado.

 
How was your weekend? Whether or not it was a long one, I hope it included lots of time spent doing your favorite things. Mine did: I spent time cooking, baking, swimming, sleeping in, and eating burgers. I couldn’t have asked for much more!
 
It’s been about two weeks since Ben and I moved to Chattanooga, and I’m so happy to be here. I’ve only had three full days of work so far, so it’s all felt a bit like a giant vacation. We’re staying with my future sister-in-law and her husband and my three future nieces, and they are all so much fun. The girls are eight, six, and three years old, and make me want to have my own children YESTERDAY. They love to help me cook, which is a welcome change since so often I’m alone in the kitchen.

On Friday we made chocolate pudding. I’d made the recipe before (I just substitute tapioca flour for the cornstarch to make it grain-free) and knew it only made 6 servings, but figured we could stretch it to feed 7, 3 of whom are not full grown. Right when the girls and I had finished the pudding and were looking for cute little cups to put it in, Ben announced that his parents and brother would also be joining us for dinner. That raised the total count to 10.
 
Faced with the fear of not enough dessert, the girls suggested another batch of these brownies (similar recipe here–omit the cinnamon and cayenne and add a handful of chocolate chips for a kid-friendly, double chocolate version). I agreed. After baking the brownies, we spread our meager stash of chocolate pudding on top like frosting, added a layer of whipped cream, and sprinkled some more chocolate chips on top for good measure. The result was something so decadent that the eight year-old, who prides herself on usually being able to eat several servings of dessert, was satisfied after just one. When it follows the fear of not enough dessert, too much dessert is a wonderful thing indeed! The pudding brownies lasted for days in the fridge and made excellent snacks throughout the weekend.

from breakfasts and snacks to dinners and desserts.
Figs are in season now, and while they’re great eaten just as-is, I also love cooking with them. I’ve been especially excited about figs this year, even writing a poem about them in the style of Pablo Neruda (scroll down in this post to read my ode to figs). My fiancé and I just moved down to Tennessee and, since my campaign to get him to raise goats with me has been unsuccessful, I now have my heart set on planting a fig tree or two. Hopefully in a few years I’ll be able to make all these recipes with homegrown figs!
For now, store-bought figs will have to do. My local grocery store has plenty of black mission figs (pictured above in the top left of the collage), and I’ve also seen brown turkey and calimyrna figs. I wanted to round up all of the most delicious paleo-friendly fig recipes in one place in order to inspire us all to take full advantage while they’re still around. I scoured all my favorite blogs and websites to find mouth-watering ways to use figs at every meal of the day. The recipes below should work well with any kind of fresh fig, or even a mix of more than one variety!
All of the recipes linked to here are gluten free and grain free, but some do contain dairy. If the original recipe doesn’t list substitutions, I’ve noted ways to make the recipe dairy free. From breakfast bowls to pizza, salad to chocolate tarts, and smoothies to chutney, there’s something figgy here for everyone!

and topped with a rich crumble made with hazelnut flour and pumpkin seeds.
 
Hello from Chattanooga, our new home! Ben and I packed everything up and drove from Boston to Tennessee across two days, arriving last night a little after midnight. I’m in love with my new city, which is Ben’s hometown, already. So far we’ve driven around a bit looking at houses, and had amazing burgers at Main Street Meats (see my bunless burger on Insta!). We’re also dogsitting for Ben’s sister, so I get to spend time with this guy.
 
I spent a while editing the photos of this fabulous strawberry-peach crisp with hazelnut-pepita crumble today. The photographs make me a little sad, because this was the last photo shoot I did in our apartment in Boston, where I’ve taken all the photos for the blog so far and all the photos for my cookbook, Paleo Planet. I hope our next apartment has light that I like just as much!

Anyway, enough wistful reminiscing about the natural light at my old apartment. We’re talking crisp today! I had some good-looking strawberries and peaches, but wanted to do more than just eat them. In part because I was trying to avoid packing, I decided to bake. (Yes, when I’m feeling stressed, I avoid whatever I’m worried about and bake instead. No, my fiancé has never complained!)
 
I put the freshly cut fruit right into the greased baking dish and added a little maple syrup, a tiny bit of tapioca flour to keep the juices under control, and a pinch of salt and the seeds of half a vanilla bean to bring out the natural sweetness of the fruit. I mixed it all together right in the dish to avoid having to wash an extra bowl. (I did have to wash the bowl I made the crumble in, but that’s it for this recipe: one bowl + the baking dish).

I’ve kind of been boycotting grocery stores. Weekend before last I went to Florida for a wedding, and since getting back I have not set foot in one. I finished up my last week of my last internship for graduate school this past Friday, we’re getting ready to move down to Chattanooga this coming weekend, and I’m exhausted. Ben has been kind enough to pick up essentials like coffee, eggs, fruit, and bacon for us, but the eggs ran out yesterday.

What’s a girl to do without any eggs for breakfast and with a long day of packing ahead of her? The answer is definitely not grocery shopping. The answer is curry butter shrimp! Yes, I ate this at ten in the morning. No, I have no regrets. #dinnerforbreakfast may not be mainstream yet, but just you wait and see!

I didn’t do a 30 Minute Mondays post yesterday because I wanted to announce my cookbook (Paleo Planet is available for pre-order from Amazon, Barnes & Noble, and indie bookstores near you!). This is even better, though, because this is like 10 Minute Wednesday–not as alliterative, but much faster. Not counting the rice or cauliflower rice, this meal comes together in just ten minutes. (And, true confession, I didn’t even make this rice. It’s left over from the Indian food we ordered last night.)

Curry butter shrimp is a flavorful pantry recipe that requires almost no chopping (except for the cilantro–but if you’re really anti-chop you could just break that up into little sprigs). Melted butter or ghee is mixed with Thai curry paste to form a fragrant sauce for cooking the shrimp. A tiny bit of maple syrup and fish sauce add just enough sweetness and umami to complement the rich butter and spicy curry.

Writing this cookbook was a ton of work, but I’ve never eaten better than I did while working on it! Still others just incorporate exotic flavors into an old classic or provide a fresh twist on a well-loved recipe.

When is the last time you got to spend the day on a farm? For me it had been far too long! When I was a kid I went to farm camp and as a teacher I took my students on some fun farm field trips, but it had been a while since I’d gotten to take in all the sights, smells, sounds, and tastes of life on a working farm.
My mom and I recently went to a paleo picnic/farm tour/book signing at Clark Farm in Carlisle, MA. The event was hosted by Diana Rodgers, blogger at Sustainable Dish and author of The Homegrown Paleo Cookbook, the tome that spurred my not-yet-successful campaign to get Ben to agree to raise goats with me. Whether you’re looking for homesteading advice, delicious paleo recipes, or both, that book has what you need! Melissa Joulwan of The Clothes Make the Girl and Well Fed fame, Steph Gaudreau, blogger at Stupid Easy Paleo and author of The Performance Paleo Cookbook, and Ciarra Hannah, blogger at Popular Paleo and author of The Frugal Paleo Cookbook, co-hosted the event. It was such a treat to see so many great paleo writers and fans in one place!

The afternoon began with a tour of the farm led by Diana’s husband, Andrew Rodgers, farmer extraordinaire. It was so cool to hear about the operations of the farm, from planting to harvesting to breeding.

Of course, my favorite part was taking pictures of all the animals (so much so that I did not take a single picture of the amazing food!). Is it me or are these Berkshire pigs extremely photogenic? Scroll down for several more photos of them. They were totally working it for the camera!

Lamb burgers are stuffed with manchego cheese and cherry jam for an elegant twist, and served on easy-to-make yeasted paleo burger buns!
 
Last year, my fiancé Ben asked me to make stuffed lamb burgers for his birthday dinner. At that point I had never made a stuffed burger or even cooked with lamb, which I didn’t think I liked. Since it was his birthday, though, I went for it.
Can you see where this story is going? Spoiler alert: the burgers were delicious (and they’re especially delicious on paleo burger buns!). Stuffed burgers are not hard to make, and it turns out I DO like lamb!

I make burgers all the time because they are such an easy, simple dinner, but I usually make them with beef and use butter lettuce for the buns. Upgrading to a lamb burger (and a stuffed one at that!) and making my own paleo burger buns definitely kicked my burger night game up several notches.
These burgers are stuffed with manchego cheese and cherry jam, so you end up with the perfect balance of sweet, salty, and meaty tastes. The strong flavors of lamb pair really well with fruit preserves, and I chose manchego because it’s one of my very favorite cheeses. If you’re avoiding dairy, you can stuff the burgers with just jam and they’ll still be delicious. You could even add some avocado slices on top for extra creaminess. Or, if adding jam to a burger freaks you out, you can stuff them with only the cheese (but I do hope you’ll try the jam at least once!).

Gluten-Free Menu by Akinto at Wink & Nod

Disclosure: I was invited to a complimentary dinner to try the gluten-free menu at Wink & Nod. I wasn’t obligated to blog about it, but it was so delicious that I wanted to share.

Last month Ben and I had the opportunity to attend an amazing gluten-free dinner for Boston-area bloggers at Wink & Nod, a unique restaurant & bar in the South End that features a rotating kitchen. That means every six months a new chef takes up residence there to serve their own menu alongside Wink & Nod’s cocktails and other libations. Right now Chef Patrick Enage is cooking his Akinto menu, which is heavily influenced by his Filipino heritage and features many gluten-free items. You can read more about the chef and his menu here. Also, you might want to get over there soon, because he’ll only be there through the end of the summer!
The dinner at Wink & Nod was one of the best restaurant meals I’ve ever had. (You might think I don’t eat out much because I’m so busy cooking myself, but you’d be wrong! I have always loved eating out and do it way more than I should, so I’ve been to my fair share of great restaurants.) Everything we tried was both delicious and beautiful, which, as a wanna-be food stylist, I really appreciated. Each dish was built with contrasting flavors, colors, and textures that made the food really satisfying and interesting at the same time.
