Baba Ganoush with Spiced Lamb & Mint

Turn silky smooth eggplant dip into a meal by adding a pile of fragrant meat on top! This baba ganoush with spiced lamb & mint will quickly become a summer favorite.

In case you missed my subtle Instagram announcements, I’m pregnant! For a few more hours, you can catch a glimpse of the growing bump in my stories. We’re expecting a baby girl right around Christmas, and both Ben and I are so excited.

This pregnancy is part of the reason I’ve been posting so infrequently the last few months. Even before I realized I was pregnant, I was hit with terrible exhaustion that lasted all of the first trimester and a few weeks into the second. Now, at 17 weeks, I finally feel like some of my energy has returned within the last four or five days.

It’s funny because I fully expected to have morning sickness, but didn’t at all–I got off scot-free with no nausea–but was completely unprepared for how tired I’d be. I’ve never experienced exhaustion anything like it in my whole life! No matter how much I slept, I’d wake up still tired, and only become less energetic over the course of the day.

I’ve never been a napper unless I’m really sick, but these past few months, I have napped like a champion. On days spent at home, I could nap from about 2-5, and still go to bed again around 10 pm and sleep through until 7 or 8.

Roasted Rack of Lamb with Blueberry Sauce

I’m a total berry fanatic, and I especially love blueberries. Whenever I go grocery shopping, I troll the produce section to see if fresh blueberries are on sale, and often end up buying them even when they’re not. I’m a fan of frozen blueberries, too, but until recently, I’d only used them in smoothies and desserts (this blueberry buttermilk ice cream being my all-time favorite).

When the U.S. Highbush Blueberry Council asked me to create a savory recipe featuring frozen blueberries, I was almost instantly inspired to create this very dish: a simple roasted rack of lamb with an easy but vibrant sauce made with blueberries and crème fraîche. Blueberries pair really well with tart ingredients like lemon juice, buttermilk, and crème fraîche, and with my recently discovered love of lamb, putting blueberries, crème fraîche, and lamb together seemed like a no-brainer.

Stuffed Lamb Burgers + Paleo Burger Buns

Lamb burgers are stuffed with manchego cheese and cherry jam for an elegant twist, and served on easy-to-make yeasted paleo burger buns!
 
Last year, my fiancé Ben asked me to make stuffed lamb burgers for his birthday dinner. At that point I had never made a stuffed burger or even cooked with lamb, which I didn’t think I liked. Since it was his birthday, though, I went for it.
Can you see where this story is going? Spoiler alert: the burgers were delicious (and they’re especially delicious on paleo burger buns!). Stuffed burgers are not hard to make, and it turns out I DO like lamb!

I make burgers all the time because they are such an easy, simple dinner, but I usually make them with beef and use butter lettuce for the buns. Upgrading to a lamb burger (and a stuffed one at that!) and making my own paleo burger buns definitely kicked my burger night game up several notches.
These burgers are stuffed with manchego cheese and cherry jam, so you end up with the perfect balance of sweet, salty, and meaty tastes. The strong flavors of lamb pair really well with fruit preserves, and I chose manchego because it’s one of my very favorite cheeses. If you’re avoiding dairy, you can stuff the burgers with just jam and they’ll still be delicious. You could even add some avocado slices on top for extra creaminess. Or, if adding jam to a burger freaks you out, you can stuff them with only the cheese (but I do hope you’ll try the jam at least once!).
