Peach Nectar Recipe

This peach nectar recipe is an easy and delicious way to sip on summer’s best peaches. If it’s a special occasion, add some prosecco and make it a bellini!

Here it is: the essence of summer peaches in drinkable form! This peach nectar is so simple to make and so, so good. Basically we’re blending fresh peaches with a little bit of lemon and honey to balance their flavors, plus a hint of salt and vanilla to round things out. I was going to call this a peach agua fresca, but it’s thicker than that and almost creamy (in the most delicious way possible).

This pitaya peach smoothie has quickly become my go-to power breakfast because it’s easy, healthy, gorgeous, and delicious. What more can you ask for in the morning?

Big news: Ben and I are married! We started dating almost six years ago, before the idea of starting a food blog had even crossed my mind, got engaged almost three years ago, and tied the knot on Saturday. I’m so happy and in a way amazed that we are finally married, mostly because we’re not the best at planning big events. However, we somehow pulled it off (with a huge amount of help from our families and especially my mother, who put together all the little decorative elements and details into something better than I’d ever imagined) and are so thrilled to be husband and wife. Also, Ben’s sister and her husband threw us an outdoor rehearsal dinner that was so fun I worried the wedding itself couldn’t top it, complete with a gorgeously decorated tent in their driveway and a late-night fire pit. I could go on and on about our wedding weekend, but should probably save it for a separate post since I also have lots to say about these smoothies. If you’re interested, though, here are a couple of photos from our first look shot by my dear friend, bridesmaid, and photographer extraordinaire Lindsey Lowe.

So, smoothie time! I have been making smoothies all spring and summer long, and this pitaya peach smoothie is my very favorite. I shot a cookbook written by someone else this summer (more details coming!) for the first time, and had 60 photos due just over two weeks before my wedding date. As if photographing a cookbook and planning a wedding wasn’t enough, I also continued to work 30 hours a week as a speech therapist and took on several other freelance projects. To say I didn’t have time to cook breakfast would be an understatement. This is such an easy breakfast, especially if you use an immersion blender like I do–you can make your smoothie in a big jar and drink it from there, too!

Pineapple Peach Margaritas

These creamy, frozen pineapple peach margaritas are just the thing for hot summer evenings.

Somehow a whole month has passed without me sharing a recipe, and it’s felt like no time at all! I didn’t intend to take such a break, and I’ve been sitting on these scrumptious margaritas for quite some time, but one thing after another kept piling up. I’ve been hard at work on some exciting freelance projects that I can’t wait to tell you about as soon as I’m able!

Pineapple Peach Margaritas

For today, though, I’m offering a simple, sweet, and creamy libation. These pineapple peach margaritas are made with ripe summer peach, frozen pineapple, fresh-squeezed orange and lime juice, and a splash of cream or coconut milk. I like a mix of sea salt and raw sugar for the rim, which helps strike an ideal and refreshing balance between sweet and salty tastes.

Summer Kale Salad with Peaches and Candied Pecans

This refreshing summer kale salad is packed with seasonal superfoods and topped with creamy goat cheese and crunchy candied pecans.

Kale salads. How do you feel? I was a little suspicious back in the day, but if I give the kale a good massage and add a lot of different toppings, I can now get pretty excited about them. If you’re not into kale salads yet, let me see if I can sell you: we’re adding juicy peaches and blueberries, creamy goat cheese, and perfectly salty-sweet candied pecans.

CANDIED PECANS! Sorry to shout, but they’re so good, and they’re super easy and quick to make on the stovetop in less than ten minutes. No fuss, no oven. And you may want to make a double batch, because it’s hard to stop snacking on them. I ate a lot of mine before the salad even got dressed!

Summer Kale Salad with Peaches and Candied Pecans

In other news, I have a serious peach problem. Last summer, we got down to Chattanooga at the end of peach session, right after The Peach Truck had left town. I was so mad I had missed out. All year I waited and checked the schedule. And when they came to East Ridge a little over a week ago, I was there. I bought a 25-pound box of peaches and a one-pound bag of pecans.

Since then, it’s been all peaches all the time. In addition to eating an embarrassing number of them out of hand, juice dripping everywhere, I’ve made a peach dutch baby, peach margaritas (I shared the full recipe on Insta–they’re so good!), peach muffins, and peach ice cream.

You’re less than 30 minutes away from this healthy paleo meal of spice-rubbed pork chops and grilled peaches served with bitter greens and avocado.

 
How was your weekend? Whether or not it was a long one, I hope it included lots of time spent doing your favorite things. Mine did: I spent time cooking, baking, swimming, sleeping in, and eating burgers. I couldn’t have asked for much more!
 
It’s been about two weeks since Ben and I moved to Chattanooga, and I’m so happy to be here. I’ve only had three full days of work so far, so it’s all felt a bit like a giant vacation. We’re staying with my future sister-in-law and her husband and my three future nieces, and they are all so much fun. The girls are eight, six, and three years old, and make me want to have my own children YESTERDAY. They love to help me cook, which is a welcome change since so often I’m alone in the kitchen.

On Friday we made chocolate pudding. I’d made the recipe before (I just substitute tapioca flour for the cornstarch to make it grain-free) and knew it only made 6 servings, but figured we could stretch it to feed 7, 3 of whom are not full grown. Right when the girls and I had finished the pudding and were looking for cute little cups to put it in, Ben announced that his parents and brother would also be joining us for dinner. That raised the total count to 10.
 
Faced with the fear of not enough dessert, the girls suggested another batch of these brownies (similar recipe here–omit the cinnamon and cayenne and add a handful of chocolate chips for a kid-friendly, double chocolate version). I agreed. After baking the brownies, we spread our meager stash of chocolate pudding on top like frosting, added a layer of whipped cream, and sprinkled some more chocolate chips on top for good measure. The result was something so decadent that the eight year-old, who prides herself on usually being able to eat several servings of dessert, was satisfied after just one. When it follows the fear of not enough dessert, too much dessert is a wonderful thing indeed! The pudding brownies lasted for days in the fridge and made excellent snacks throughout the weekend.

This gluten-free strawberry-peach crisp is lightly sweetened with maple syrup 
and topped with a rich crumble made with hazelnut flour and pumpkin seeds.
 
Hello from Chattanooga, our new home! Ben and I packed everything up and drove from Boston to Tennessee across two days, arriving last night a little after midnight. I’m in love with my new city, which is Ben’s hometown, already. So far we’ve driven around a bit looking at houses, and had amazing burgers at Main Street Meats (see my bunless burger on Insta!). We’re also dogsitting for Ben’s sister, so I get to spend time with this guy.
 
I spent a while editing the photos of this fabulous strawberry-peach crisp with hazelnut-pepita crumble today. The photographs make me a little sad, because this was the last photo shoot I did in our apartment in Boston, where I’ve taken all the photos for the blog so far and all the photos for my cookbook, Paleo Planet. I hope our next apartment has light that I like just as much!

Anyway, enough wistful reminiscing about the natural light at my old apartment. We’re talking crisp today! I had some good-looking strawberries and peaches, but wanted to do more than just eat them. In part because I was trying to avoid packing, I decided to bake. (Yes, when I’m feeling stressed, I avoid whatever I’m worried about and bake instead. No, my fiancé has never complained!)
 
I put the freshly cut fruit right into the greased baking dish and added a little maple syrup, a tiny bit of tapioca flour to keep the juices under control, and a pinch of salt and the seeds of half a vanilla bean to bring out the natural sweetness of the fruit. I mixed it all together right in the dish to avoid having to wash an extra bowl. (I did have to wash the bowl I made the crumble in, but that’s it for this recipe: one bowl + the baking dish).

I’m not sure where to start: there are so many exciting things going on here! We’ve got a tangy, sweet, paleo peach barbecue sauce, spice-rubbed, slow-cooked pork that’s perfect on its own or drenched in the aforementioned sauce, and a pair of hard-core, handy-dandy meat claws.
 
Was that too many adjectives? Is it possible for a tool to be both hard core and handy dandy? I apologize–there’s just something about pulled pork that makes me a bit verbose. It’s so tender, so easy, so versatile, and so GOOD.

For this recipe, a pork shoulder is coated in a simple spicy-sweet mix and popped in the slow cooker with an onion and a bit of olive oil. While the pork is cooking, you can put your feet up and enjoy the wonderful aroma permeating your house.
 
Or, you can make some peach barbecue sauce to go with it.

Orange Peach Raspberry Smoothie (Paleo, Vegan)

This orange peach raspberry smoothie is bright, easy, tasty, and full of antioxidants. Avocado and a  bit of turmeric give this smoothie great depth of flavor.

When I’m sick, I crave smoothies. Just thinking about blending together a bunch of vitamin-packed produce makes me feel a tad better, and my outlook only improves once I’m actually drinking it. Smoothies, especially ones that look like sunshine in a glass, also help me momentarily forget about winter. For me, they’re are an important aspect of self-care.
I wanted this smoothie to have plenty of Vitamin C, so I used oranges, peaches, and raspberries. Also, like I almost always do, I added an avocado. It makes the smoothie really creamy, but you won’t taste it. The healthy fat from the avocado also makes this nice and filling.
Orange Peach Raspberry Smoothie (Paleo, Vegan)
To make the smoothie pack even more of a punch, I added some turmeric and fresh ginger. In addition to providing more potential health benefits, these rhizomes add depth of flavor, and the turmeric deepens the golden color.
The cara cara oranges I used also contributed to the hue of this drink. I bet using blood oranges would make the color pop even more!

Salted Maple Caramel Peach Bars (Gluten free, Paleo)

When I decided to try the paleo lifestyle, one of my main concerns was whether I would still be able to have salted caramel.  Salted caramel is an essential dessert flavor, one that I believe deserves a place right up there with chocolate and vanilla.  If there wasn’t a way to make paleo salted caramel, I wasn’t sure I’d be able to handle it.

Mocha Marinated Steak with Peach Salsa and Cauliflower Mash

If you haven’t stopped by since last month’s chocolate party, you’ll notice that things have changed some since the days of double malt ice cream sandwiches.  A Calculated Whisk is going paleo! I’m doing a Whole30, and the blog is doing it with me.  So for the rest of August, you’ll find more healthy recipes with fruits, vegetables, eggs, meat, and seafood, but no grains, sugar, sweeteners, legumes, soy, milk, or processed food.  Desserts (at least paleo ones, which can still be impressively delicious!) will return in the fall.
