This crispy chicken salad with pineapple pico de gallo is full of fresh, vibrant ingredients to brighten up your winter. Plus, it’s paleo and Whole30 compliant!

Crispy chicken: I’m starting to worry I talk about it too much. The thing is, it just doesn’t get much better. And it definitely doesn’t get ANY better when we’re talking about a Whole30-compliant salad. This crispy chicken salad with pineapple pico is the stuff dreams are made of!

While my usual method for crisping up chicken is to use skin-on chicken thighs (see exhibits A, B, and C), this time I wanted crispy breaded chicken. I didn’t want to use bread, of course, and almond flour doesn’t quite produce the requisite level of crunch. I was planning to try crushed up plantain chips, but I couldn’t find any that were made with Whole30-friendly oil. It was in my search for plantain chips that I laid eyes on EPIC’s sea salt & pepper pork rinds.

Crispy Chicken Salad with Pineapple Pico de Gallo (Paleo, Whole30)

The ingredients are Whole30-compliant, and I confirmed on the forums that if pork rinds are used in the context of a nutritious recipe and not just for mindless snacking, they’re fine. In this case, I eliminated any (convenient) snacking possibilities by smashing the rinds to smithereens while they were still in the bag.

Anyway, they make a wonderfully flavorful breading for crispy chicken, which then graces the top of this salad that’s already packed with just the right combination of sweet, spicy, crunchy, peppery, juicy, and creamy bites.

This easy sheet pan salmon and delicata squash takes just half an hour and one pan to make. It’s also paleo, dairy free, and Whole30 compliant!

Happy 2017! I hope your new year is off to a wonderful start. If you’re doing a January Whole30 or just trying to clean up your eating a bit this month, I have just the recipe for you. Sheet pan salmon and delicata squash is a super flavorful dinner that only requires four ingredients, half an hour, and one pan. I used homemade Creole seasoning on the squash and the fish, but store bought Creole seasoning or your favorite spice blend would also work.

This recipe is part of my 30 Minute Mondays series, which has been on hold for a while now. However, this month I’m back to sharing quick and easy recipes for you each Monday, and am going to keep them all Whole30-compliant for January.

Since we’re roasting and then broiling for this recipe, I recommend using a high-heat cooking oil like duck fat, ghee, or avocado oil. I buy Epic duck fat and La Tourangelle avocado oil from Thrive Market and make my own ghee. Both duck fat and ghee impart extra rich flavor to the dish, while avocado oil is more neutral. The higher smoke points of all three of those fats make them ideal for roasting and searing, whereas other fats like olive oil are best used raw or in low-heat cooking.

If you’re looking for a uniquely delicious drink to ring in the new year, this smoky maple margarita is just the ticket!

If you celebrate, I hope you had a wonderful and Christmas and a fabulous first night of Hanukkah! My mom flew down to Chattanooga and arrived on Christmas Eve, and we have been having the best time hanging out with my in-laws and nieces. The girls are beyond excited because they got a trampoline yesterday. In between eating all the holiday treats, it was really nice to bounce a bit.

Easy Instant Pot Mashed Potatoes

These easy Instant Pot mashed potatoes save time and are just as delicious as stovetop taters. There’s a paleo and Whole30 version, too!

Ever since I got my Instant Pot last year on Black Friday, I haven’t had to wait for water to boil to make mashed potatoes and have pretty much forgotten about the stovetop version. The Instant Pot is just so much easier and faster–there’s really no comparison. The potatoes cook start to finish in about 20 minutes, and then I mash them right in the pressure cooker with a handheld potato masher. Done and done.

Easy Instant Pot Mashed Potatoes

There are two versions in the recipe card below–the version I normally make, and the version I make when I’m doing a Whole30. In my mind there’s really no question that the regular version is a little better, but the cream-free version certainly does the trick when I’m craving the comfort of mashed potatoes during a month of squeaky-clean paleo eating.

In both versions the potatoes are cooked with chicken stock instead of water, which means you don’t have to drain them. It also adds flavor and nutrition. If you use bone broth like I do, your mashed potatoes will have a good amount of protein in them!

The main difference between the two variations is that the Whole30 version calls for more stock since you won’t be adding cream later. It also calls for a little extra ghee to make up for that lack of cream. I always like to finish off my mashed potatoes by adding a little more butter or ghee on top, and in the winter I love to add some finely minced rosemary, too. In the warmer months, snipped chives provide a similar pop of color and freshness.

This gluten-free, no-bake gingerbread buche de noel is an icebox cake yule log that’s beyond easy to make and tastes amazing. No one will guess you didn’t even turn on your oven!

A few years ago when I spent my first Christmas with Ben’s family in Chattanooga, we started a tradition of making a yule log cake. These cakes are the modern-day version of an actual yule log, a giant piece of wood that for centuries was placed on the hearth and burned for all of the 12 days of Christmas in many European households. Since we don’t have a hearth or even a fireplace and since I really like cake, I’m glad this tradition went the way it did.

Every year for the past three years we’ve made this Chocolate Peppermint Roll from Joy the Baker, but this year I laid eyes on her Chocolate Peppermint Icebox Yule Log Cake. My ears perked up, because “icebox cake” means no baking is involved. I like to make Christmas cakes with my three nieces and while they all love baking, it’s a lot of work to bake both the cake and the meringue mushrooms while making sure everyone gets a turn to do everything at each stage of the process. I wanted to roll with the icebox idea but change up the flavor profile, so I created this no-bake gingerbread buche de noel.

Persimmon Bacon Bites with Rosemary Goat Cheese

I just discovered persimmons this year and they’ve quickly become my new favorite fruit. They taste kind of like a delicious mashup between a mango and a papaya, and I find them incredibly addictive. I used fuyu persimmons here and haven’t had a chance to try other varieties yet, so I recommend finding fuyus for this recipe. They’re the ones that are kind of squat like little pumpkins and are not pointed at the bottom.

When I’m eating a persimmon plain, I like to let it get nice and soft so the insides are custardy and smooth. However, when you’re making persimmon bacon bites, you want to choose persimmons that are still a bit firm so the slices will hold together well. Once roasted, they’ll have that smooth texture of a perfectly ripe raw persimmon with an even deeper sweet flavor. The hint of rosemary in the goat cheese makes these bites taste fresh and seasonal, and the bacon ties everything together both literally and figuratively.

Pressure Cooker Ropa Vieja (Slow Cooker, too!)

Have you tried ropa vieja? Don’t worry about the fact that the name is Spanish for “old clothes”–this is supremely delicious comfort food, with nothing old or ragged about it. To make this pressure cooker ropa vieja, beef is quickly seared, then cooked until tender in an addictive sauce made with Pomí tomatoes, bell peppers, onion, garlic, smoked paprika, and other spices.

Next, capers, raisins, and pimiento peppers are added for pops of color, sweetness, and tart, briny flavor. The result is a dish so soothing and satisfying that Ben and I aren’t even close to being tired of it, despite having eaten three giant batches over the past two weeks.

Pressure Cooker Ropa Vieja (Gluten free, Dairy free, Paleo)

No pressure cooker? Don’t fret (but I do highly recommend the Instant Pot*<–this and all others marked with * are affiliate links and I earn from qualifying purchases). This ropa vieja is just as delicious made in a slow cooker*. I was surprised to find the two versions indistinguishable in taste and texture, so it’s really just a question of how much time you have and which appliance you want to use.

I used Pomí Organic Strained Tomatoes* for this recipe. They’re similar to crushed tomatoes and provide all the great umami-packed flavor of fresh tomatoes grown in the Italian sunshine. (By the way, I also tested this recipe with Pomí’s chopped tomatoes and they worked great, too!) I love that they’re organic and non-GMO certified.

I especially enjoy spicy foods in the winter–I’ll take all the warmth I can get when it’s cold outside. This pomegranate roast chicken is perfect for warming up both your kitchen as it roasts and you when you eat it. If you’re spice-averse, though, don’t worry. You can customize the heat level by adding fewer habanero peppers.

The peppers aren’t the only thing bringing heat to this chicken. Spices like cinnamon, allspice, and smoked paprika also have a warming effect. I took a look at the cutest cookies from my archives, 2013’s sparkling sandwich cookies, and gave them a chocolate peppermint upgrade. The resulting chocolate peppermint sandwich cookies pack a lot of joy and holiday cheer into one tiny, almost-spherical package.

Chocolate Peppermint Sandwich Cookies (Grain free)

The cookie base here is super simple, made with just almond flour, Rodelle‘s baking cocoa and vanilla extract, butter, honey, and a touch of salt and baking soda. Rodelle’s cocoa has a rich aroma and great depth of flavor that makes it my very favorite cocoa for baking (and for turning the occasional morning coffee into a makeshift mocha). I also like to add a tiny bit of espresso powder to further deepen the chocolate flavor, but you can leave that out if you prefer.

There are no eggs in sight and of course no grains either, which make these cookies ideal for sharing with friends and family with food allergies and sensitivities. (Interested in a dairy-free version? The cookies should work with coconut oil instead of butter, and you could try sustainably-sourced palm shortening or vegan butter in the frosting.)

Grain-free Spiced Chocolate Torte

This grain-free spiced chocolate torte is a great to end a festive dinner. It will satisfy any chocolate lover, but also has a delectable hint of spice.

Thanksgiving is over, and I’m planning to top everything with pomegranate arils from now until the end of the year. This grain-free spiced chocolate torte, of course, is no exception.

I love using warming spices like cinnamon and cardamom to make desserts smell and taste extra festive during the holiday season. However, I’m also a huge lover of chocolate. I didn’t want to choose between my love of chocolate and my love of a little seasonal spice, so I decided to combine the two into a spiced chocolate torte.

Grain-free Spiced Chocolate Torte

This torte has a perfect texture and crumb thanks to a combination of almond flour and tapioca flour from Bob’s Red Mill. Those two flours are my go-to for grain-free baking year round. The almond flour, which is made of whole, blanched sweet almonds, provides the tenderness and richness that every torte needs. And since Bob’s Red Mill almond flour is super finely ground, there’s no need to sift it before using! As an extra bonus, almonds are packed with healthy monounsaturated fats and protein, but are low in carbohydrates (and are naturally gluten free).

One-Pot Turmeric Chicken and Rice (Gluten free)

This easy one-pot turmeric chicken and rice is pure winter comfort food, with warming Indian spices and plenty of vegetables.

I work with kids as a speech therapist during the day, and I remember a while back I asked one of my kids what his favorite food was and he said, “chicken and rice”. I remember thinking, “Really? What’s so special about chicken and rice?”

Well, I am here to literally eat my words. Chicken and rice cooked together, especially with turmeric and other warming spices, a generous splash of wine, and some pops of colorful veggies, definitely qualifies as favorite-food material. Plus this dish is made with bone-in, skin-on chicken thighs, which are my absolute favorite cut of chicken. And you only have to use one pan! There is basically nothing not to love about this dish.

One-Pot Turmeric Chicken and Rice (Gluten free)

One-pot turmeric chicken and rice is going to be on my dinner menu pretty much every week for the rest of the cold months. Turmeric is a vibrant superfood that gives great color and flavor to the chicken and the rice. It goes perfectly with a bit of smoked paprika, coriander, cumin, and just the tiniest touch of cinnamon. If you like Indian food, you’ll notice this dish tastes a lot like biryani. I added onion, garlic, ginger, tomatoes, and carrots with the rice for vegetal goodness, and raisins, peas, scallions, and cilantro for extra pops of flavor and freshness toward the end of cooking.
