Sheet Pan Crispy Chicken Thighs with Cabbage & Apples

This sheet pan crispy chicken with cabbage and apples tastes amazing and is easy to throw together. It’s paleo, dairy free, gluten free, and Whole30-compliant–and all you’ll need to wash is one baking sheet!

Is anyone else holding on to wintry foods for longer than usual this year? Even though it’s almost April and the high will be 85 degrees in Chattanooga today, I’m still craving everything roasted or braised, plus soups, stews, and all other things comfort food.

I know almost everything is a struggle these days, and I hope you and your loved ones are staying safe and home as much as possible. Access to food is now spottier than ever and constantly shifting, so I hope you are staying well fed. I photographed this over a month ago when it was still business as usual here, but lately have had to try several times before succeeding in obtaining bone-in chicken.

Hello, happy Monday, and welcome to breakfast week! It’s nothing formal, but I have several scrumptious breakfast ideas coming up that I’m so excited to share with you, starting with these sheet pan baked eggs with sweet potatoes, kale, and cilantro-pepita pesto. This recipe is something I make versions of for myself all the time for quick breakfasts and lunches, because the combination of roasted sweet potatoes, crispy kale, and runny yolks is pretty much irresistible.

Whole30 Breakfast Nachos (Gluten free, Dairy free, Paleo)

These Whole30 breakfast nachos are ideal for game day or anytime you’re craving a decadent plate of nachos but still want to stick to paleo ingredients. They take just half an hour to make!

Where have breakfast nachos been all my life? They’re a million times better than any nachos I’ve ever had before, despite being free of gluten, grains, and dairy. They’re super fast to make and just as welcome in the evening as at breakfast time. What’s not to love?

For these Whole30 breakfast nachos, we’re using thinly sliced potatoes cooked to a crisp in bacon grease instead of tortilla chips. This is one of those healthier substitutions that just so happens to taste way better than the original. The potatoes get really nice and crunchy around the edges, but still retain a little toothsome chew near the middle. I’d happily eat a sheet pan full of them with no adornment whatsoever.

I can’t say no to any of these toppings, though. We’ve got crispy bacon, eggs cooked to your liking (bring on the runny yolks for me!), rich avocado, thinly sliced scallions, crispy bits of radish, fresh cilantro, tart lime, and some salsa on the side. And once you break that yolk and let it mix a bit with the potatoes and toppings, I swear to you it will taste like these nachos have cheese in them! You just have to try it to believe it.

16 Whole30 Sheet Pan Dinners (Gluten free, Grain free, Paleo)

Who doesn’t love the idea of roasting up a whole nutritious meal on one sheet pan? These Whole30 sheet pan dinners will keep you well fed all month long while minimizing prep time and cleanup.

I know many of you are in the midst of a January Whole30, and you may be reaching that point during the month when dinner inspiration starts to be harder and harder to come by. I’m a little behind because I’m starting my Whole30 next week, but I’ve been spending a lot of time finding and developing easy paleo recipes to make this challenge a breeze for everyone.

Today I’m sharing this roundup of Whole30 sheet pan dinners. These meals are easy to make in the oven with just one sheet pan. It’s so satisfying (and beautiful!) to have an entire nutritious meal laid out on one big pan. If you haven’t jumped on the sheet pan dinner train yet, get excited. You’re going to love it!

This easy sheet pan salmon and delicata squash takes just half an hour and one pan to make. It’s also paleo, dairy free, and Whole30 compliant!

Happy 2017! I hope your new year is off to a wonderful start. If you’re doing a January Whole30 or just trying to clean up your eating a bit this month, I have just the recipe for you. Sheet pan salmon and delicata squash is a super flavorful dinner that only requires four ingredients, half an hour, and one pan. I used homemade Creole seasoning on the squash and the fish, but store bought Creole seasoning or your favorite spice blend would also work.

This recipe is part of my 30 Minute Mondays series, which has been on hold for a while now. However, this month I’m back to sharing quick and easy recipes for you each Monday, and am going to keep them all Whole30-compliant for January.

Since we’re roasting and then broiling for this recipe, I recommend using a high-heat cooking oil like duck fat, ghee, or avocado oil. I buy Epic duck fat and La Tourangelle avocado oil from Thrive Market and make my own ghee. Both duck fat and ghee impart extra rich flavor to the dish, while avocado oil is more neutral. The higher smoke points of all three of those fats make them ideal for roasting and searing, whereas other fats like olive oil are best used raw or in low-heat cooking.

Succulent roasted shrimp and asparagus are served with a tangy garlic scape green goddess dressing for an easy, 30-minute paleo dinner that’s also Whole30-compliant.

I’m kind of mad at myself because I missed the boat on ramps this year. At the photography workshop I went to in May we ate them at almost every meal (there’s a picture of them in this post), and when I got home I vowed to track some down so I could cook with them myself for the first time. However, I’m a lazy late-evening grocery shopper and there were never any ramps left. Before long, their short season had ended.
 
You’ll be relieved to hear that I am NOT missing out on garlic scapes.

While ramps are their own kind of plant and are usually foraged wild (hence their limited availability), garlic scapes are the flowering stalks of garlic plants that farmers cut off so the plant’s energy can be fully devoted to the bulb forming below. Garlic scapes are cool looking (see evidence above) and I like their name: it sounds like they’ve been trying to escape from the head of garlic, which is pretty much what they actually do.
 
Garlic scapes are milder than regular garlic with some fresher, grassier notes to their flavor–kind of like a cross between garlic, scallions, and chives. Here I used them to make a green goddess dressing with some fresh herbs and Primal Kitchen’s avocado oil mayo, which I just tried for the first time. I’m not a mayo person at all so I don’t foresee myself ever eating it straight up, but once some other flavors are mixed in to create a dressing or aioli, I can usually hop on board. (If you haven’t seen garlic scapes at your local market, don’t worry. You can substitute scallions and a clove of regular old garlic.)
