I recently gave up coffee again, which has been rough. (If you read my blog frequently, you might remember that I gave up coffee while trying to conceive–I’m doing it again to prepare for possibly trying for a second baby at some point!) Golden milk was my caffeine-free hot beverage of choice then, and I still love it, but this cashew hot chocolate is my current favorite. It’s quick, simple, tasty, and filling–everything I need to start my day off well.

The olive oil blondies have been my go-to party/potluck dessert for several years now. They’re always a hit and I always get lots of requests for the recipe. And no one has ever been able to taste the olive oil! (Although if you prefer, you can make them with avocado oil instead).

Who’s excited for Halloween, all things pumpkin, and/or Season 2 of Stranger Things??

I am! I can barely think about anything other than the upside down. However, despite how pumped I am about the show’s return, I can definitively say that I am WAY MORE excited about this chocolate pumpkin crème brûlée. It’s the best dessert I’ve made in all of 2017 and possibly longer. It tastes amazing, it’s easy to make, and best of all, it’s really fun!

Chocolate Pumpkin Crème Brûlée (Grain free)

Let me walk you through the layers. On the bottom there’s a chocolate sauce. This is not just ANY chocolate sauce, though. It’s an intensely-chocolatey-but-not-too-rich chocolate sauce, like what you might have gotten on your sundae at a really good old-school ice cream parlor.

Initially, I was worried I wouldn’t love the sauce. It’s cocoa-based, so there’s no melted chocolate, and there’s also no cream and just a tiny bit of butter.  When I tasted the sauce on its own I was happily surprised by how good it was, but when I tasted it along with the finished crème brûlée I was blown away by how much I loved it. With the addition of chocolate extract and without the distracting richness of cream or cocoa butter, the chocolate flavor shines through in a way it doesn’t in most chocolate desserts. I know this may sound paradoxical, but the chocolate flavor is richer because the sauce itself isn’t that rich. As a foil for the super creamy pumpkin layer, it’s just perfect.

This matcha white chocolate latte is the ideal drink for the cool days of early spring. It’s made without dairy and naturally sweetened with honey to taste!

Sometimes I look back at my prior food habits and just have to shake my head. While I’m far from perfect now, the majority of what I eat is homemade with real-food ingredients. That definitely wasn’t the case for much of my life! In high school, an early lunch meant I came home starving at three in the afternoon. My solution? I would make and eat an entire box of Annie’s Bunny Shape Pasta with Yummy Cheese and wash it down with chocolate milk. Oh, and my breakfast of choice from the cafeteria, snagged on my way to 7:30 am chorus practice? A double chocolate muffin, coffee, and chocolate milk. Lunch was often chicken nuggets and french fries, plus a Creamsicle from the vending machine.

College wasn’t much better. I worked at the all-you-can-eat dining hall my freshman year, and if I didn’t like the entrée options, I would take advantage of the proximity of the waffle station to the ice cream station and make myself a waffle sundae (yup, for dinner!). And when studying at the campus center, my go-to snack was a white chocolate mocha plus a bag of spicy potato chips. Post-college, as a first-year teacher, I succumbed to the Whataburger across from my apartment or the taco truck on my way home more nights than I care to remember.

I thought back on those white chocolate mochas as I whipped up this simple matcha white chocolate latte for myself the other day, and felt pretty proud. Gone are the days of dairy-laden lattes with suspiciously sweet syrups from the campus center, and late-night dorm-room Easy Mac. And believe me, this matcha white chocolate latte is so much better than any of that!

Valentine’s Day (or Valentime’s Day, as my students always called it–this makes sense because it happens at a specific time every year!) is right around the corner. Whether or not you’re into the whole idea of a romantic holiday, it never hurts to make a special treat for yourself or someone you love, right?

Here’s a roundup of 22 grain-free treats for Valentine’s Day that anyone would be thrilled to receive. We’ve got chocolate desserts, fruit desserts, a few with both chocolate and fruit, and a bit of caramel–a little something for everyone. I’ve marked the ones that are vegan, dairy free, egg free, and nut free in case you’re looking for those.
This post was hard for me to put together because I’m still in the midst of a Whole30, but Ben graciously agreed that we can push Valentine’s Day back and celebrate when I’m finished. When February 24th rolls around, you can bet we’ll be indulging in at least one of these grain-free desserts!

Chocolate Peppermint Sandwich Cookies

Chocolate Peppermint Sandwich Cookies (Grain free)

These festive, grain-free chocolate peppermint sandwich cookies are just the thing for gifting, cookie swapping, and plain old snacking from now until the new year.

Looking for an adorable, two-bite cookie to enjoy and share this holiday season? I got you covered. I took a look at the cutest cookies from my archives, 2013’s sparkling sandwich cookies, and gave them a chocolate peppermint upgrade. The resulting chocolate peppermint sandwich cookies pack a lot of joy and holiday cheer into one tiny, almost-spherical package.

Chocolate Peppermint Sandwich Cookies (Grain free)

The cookie base here is super simple, made with just almond flour, Rodelle‘s baking cocoa and vanilla extract, butter, honey, and a touch of salt and baking soda. Rodelle’s cocoa has a rich aroma and great depth of flavor that makes it my very favorite cocoa for baking (and for turning the occasional morning coffee into a makeshift mocha). I also like to add a tiny bit of espresso powder to further deepen the chocolate flavor, but you can leave that out if you prefer.

There are no eggs in sight and of course no grains either, which make these cookies ideal for sharing with friends and family with food allergies and sensitivities. (Interested in a dairy-free version? The cookies should work with coconut oil instead of butter, and you could try sustainably-sourced palm shortening or vegan butter in the frosting.)
