Strange coincidence: last year, on January 25th, 2014, I wrote about romanesco in a post entitled 7 Uncommon Vegetables for your Produce Bucket List. I had never seen romanesco in a store. I kept my eyes peeled for it all year, but could never find any. That is, until last Wednesday, when I finally spotted some at my local Whole Foods . . . on January 25th, 2015. Weird, right?
Coming across this gorgeous vegetable exactly one year after posting about it has me wondering if it might be magic. I mean, look at those spirals! According to Wikipedia, the number of spirals on a head of Romanesco is a Fibonacci number, and its form approximates a fractal. How is it possible that something like this exists?

In addition to its special properties, romanesco is delicious. I roasted it whole because I couldn’t bear to slice it up any sooner than I had to. Its flavor is similar to cauliflower and broccoli, but a little milder and nuttier. And, just like with cauliflower or broccoli, the browned bits are extra delicious. If you can’t find romanesco, you could definitely use one of its brassica cousins for this recipe instead.

Paleo Pad See Ew

I love Thai food, and my favorite dish to order is Pad See Ew.  It’s kind of like Pad Thai’s lesser-known but cooler little sister, and it’s so good.  It’s traditionally made with wide, flat rice noodles and dark sweet soy sauce, and often has broccoli, carrots, egg, and some sort of meat or tofu.  I’m not totally sure why, but I’m completely in love with wide, flat rice noodles.  They’re just so big and chewy, and a great vehicle for soaking up whatever delicious sauce they’re paired with.
This paleo version of pad see ew is made with homemade “noodles” that are actually tapioca crepes sliced into strips.  They work perfectly in this dish.  The texture is not exactly the same as the texture of rice noodles, but it’s pretty close!  Coconut aminos and honey make a delicious paleo and gluten-free replacement for the dark sweet soy sauce.

Mini Quiches with Duxelles & Baby Broccoli (Whole30 Day 15)

I’ve only been back at school for two days, and I’m already ready for another vacation!  On my first day back, I accidentally left my computer at school.  Luckily a friend was still on campus and was able to find it and stash it in her locker, so nothing happened to it.  I was stuck without it at home, though, which meant I had to break my blogging streak.  It was a little disappointing, but I figure it’s more important to keep up the healthy eating than to blog about it everyday, right?  Tuesday was the longest day ever with class from 8 to 1:30 and back-to-back sessions in the clinic from 3 to 5.  Today, I finally made it into the kitchen.
My Whole30 is officially half over, and I’m so happy to be eating such great food.  I have almost no cravings for off-plan foods, although there was one rough evening when I was getting ready to go to dinner at a friend’s and Ben had my favorite kind of pizza delivered.  To his credit, he thought it would arrive after I’d left.  I was starving and I would have loved a slice of that pizza…but I love having my pants fit better even more.  I stayed strong, made it to my friend’s house, and enjoyed a delicious Whole30-compliant meal there.  I even managed to sit calmly at the table while everyone else had cake and ice cream!
