Eggs in purgatory with sausage and kale is a hearty and delicious breakfast that’s Whole30 compliant and perfect if you like to start the day with a little heat. 

How do you feel about a little spice in the morning? Personally, I’m a big fan. A spicy breakfast helps me wake up, kick starts my day, and makes me feel ready for anything. So as soon as I got my hands on a jar of Uncle Steve’s Organic Arabbiata, I started dreaming about pairing it with eggs for an Italian power breakfast.

I was so excited to discover Uncle Steve’s sauces because they’re made with organic Italian tomatoes and short list of other clean ingredients: organic onions, garlic, basil, and spices plus sea salt. There’s no sugar anywhere in sight! If you’ve ever done a Whole30, you know how frustrating it can be to peruse labels in the grocery store aisle and find that most prepared sauces and stocks have cane sugar or other off-plan ingredients. Uncle Steve’s sauces are all vegan, gluten free, and paleo with no added sugar, so there’s no need to worry.

Shrimp & Sausage Gumbo (Instant Pot or Not)

This paleo, Whole30-compliant shrimp and sausage gumbo is a flavor-packed meal that comes together in half an hour in the Instant Pot, and just a little longer on the stovetop.

Today’s recipe comes from my friend Megan‘s book, The Big 15 Paleo Cookbook. If you don’t have it, you need to get your hands on it as soon as possible. It’s full of simple but delicious paleo recipes made with straightforward ingredients. The book has 15 chapters, each focusing on recipes made with one of the “big 15” paleo ingredients (see the cover below to find out what they are!).

I chose to make the gumbo recipe from the shrimp chapter, and while I wondered how it would turn out since it’s made with just a handful of everyday ingredients, I was definitely not disappointed.

You don’t have to bother with a roux–this paleo shrimp and sausage gumbo gets its great flavor from vegetables, healthy cooking fat, and Creole seasoning, plus the shrimp and sausage themselves. Megan recommends using shell-on shrimp for better flavor. I was hesitant at first, but after trying it I really do think the gumbo has more flavor due to having the shrimp shells in while it cooks.

Using unpeeled shrimp also makes it harder to overcook them, which is often a problem with quick-cooking shrimp. It’s a little messy peeling the saucy shrimp, but it’s also kind of fun. I love a good hands-on eating experience! If you don’t, you can peel them beforehand or even buy pre-peeled shrimp.

Stuffed Squash with Sausage and Apple

Stuffed squash with sausage and apple is the ultimate Whole30 comfort food for fall. You can make this with delicata, acorn, or any winter squash!

I’ve been making this dish since last fall, when I never managed to make it early enough to have decent light left for a photo shoot. It quickly became one of my very favorite meals. This stuffed squash with sausage and apple is beautiful, filling, delicious, and nutritious.

The sweet squash is the perfect backdrop for savory sausage, onions, and mushrooms in a creamy cashew-based sauce, studded with little bits of apple for an extra layer of sweetness. And since these squash boats include a good dose of protein and veggies, I never feel the need to serve a side with them.

Stuffed Squash with Sausage and Apple

I first made these stuffed squash with sausage when I wasn’t doing a Whole30, so I stirred in sour cream and topped them with freshly grated parmigiano reggiano. However, the Whole30 version is shockingly similar.

Once the cashew sour cream is stirred into the sausage mixture, it tastes just as creamy as the lactose-laden version. And a little nutritional yeast gets stirred in to add a bit of cheesy flavor. I replaced the parmesan on top with chopped fresh basil, which tastes great and looks even prettier. Basically, Whole30 or not, you can’t go wrong with this dish.

Today I’m sharing a quick and delicious fall recipe for chicken apple sausage with kale, spring onions, and roasted grapes right here on my friend Lauren’s site, Wicked Spatula. It’s a quick but gourmet paleo meal that hits all the right notes with sweet and savory sausage, juicy grapes roasted with shallots, hearty kale, and lightly charred spring onions on top. I like this just as much for breakfast as for lunch or dinner, and as a bonus it’s dairy free and Whole30-compliant.

When I make a recipe, I always expect it to turn out great. Of course, sometimes it doesn’t, but if I weren’t expecting delicious results, why would I bother making the recipe at all?

To me, a mixed grill is the epitome of summer eating. When I spent a semester in Buenos Aires during college, I loved to go out with friends and order a parrilla mixta, which usually consisted of grilled steak, chicken, chorizo, and often organ meats as well, with a big bowl of herby chimichurri sauce and an even bigger bowl of french fries on the side. Add a bottle of wine and you have yourself one happy evening!

I don’t know why it took me so long to recreate a parrilla mixta at home, but when Colavita asked me to write a post on the theme of Italian summer grilling, this was the first thing that came to mind.
 
Here I’ve given the Argentine parrilla an Italian twist, marinating the steak and chicken with Italian seasonings and adding capers to the chimichurri. Argentine cuisine is heavily influenced by the food of Italy to begin with–even the Spanish spoken in Buenos Aires sounds uniquely reminiscent of Italian–so Colavita’s oils and vinegars work really well with all the components of this South American meal.

Guys, I am going back to school next week!  Part of the reason I picked January for my Whole30 is that I knew having the first two weeks of the month off would help me get myself on track with my new eating plan before having the stress of school, work, and clinic added on.  Everything has been going smoothly so far, but it’s about to get a lot harder.

The key to sticking with the Whole30 throughout a busy work week is planning and preparation.  This weekend I’m planning to make big batches of a few different meals so I can bring leftovers to school for lunch, and even eat leftovers some nights for dinner if I’m too tired to cook.  However, even though I occasionally enjoy a good dinner for breakfast, most mornings I want something a little more traditional.

So, today I’m sharing my plan for prepping a week of paleo breakfasts.  These ideas are perfect if you’re doing a Whole30, but are also just great if you have a goal to start each day with a healthy breakfast.  Most of these ideas do require you to get up and cook, but it should only take about 10 minutes, and for a nutritious & tasty breakfast, it’s worth it.

Creole Hash & Eggs (Whole30 Day 2)

It’s Day 2 of my Whole30, and I’m feeling great so far!  Yesterday I had quite a headache, which I think was because I tried to replace my morning coffee with tea.  It was too soon for that–I need to take my changes one at a time!  Since I don’t like black coffee very much, I did a little research and found this recipe for bulletproof coffee.  It’s basically hot coffee mixed with some ghee and coconut oil.  I made some using my immersion blender, and it was pretty good!  Not quite as delicious as my regular cup of joe (with copious amounts of grassfed milk, a splash of maple syrup, and a few drops of vanilla extract–none of which are allowed on the Whole30), but much more palatable than plain coffee.
