Brown Butter Turmeric Chocolate Chip Cookies

August 17, 2018 By Becky 4 Comments

Get your turmeric fix in cookie form with these vibrant, grain-free brown butter turmeric chocolate chip cookies!

I’m super excited to share these unique cookies with you today! They’re inspired by the beautiful golden hue of the tea towel in the pictures, which was naturally dyed with turmeric by my friend Maggie Pate. Her first book, The Natural Colors Cookbook, just came out this summer and is packed with easy recipes for using food and food waste to dye all kinds of fabrics and fibers the prettiest shades of pink, purple, yellow, orange, blue, and green.

The Path to Pregnancy

August 8, 2018 By Becky 33 Comments

Photos by Lindsey Lowe Photography

I blinked and my pregnancy is already almost half over! I had my twenty-week anatomy ultrasound on Monday, and can feel the baby wiggling around in my belly almost constantly. For those of you that are interested, I wanted to pop in and share a bit about our journey to pregnancy. If you’re just hungry for a new recipe, swing back by in a few days!

I mentioned in my baba ganoush post a couple weeks ago that I received an infertility diagnosis just a few months before I got pregnant, and wanted to share more about it in case anyone else is going through something similar and also to help end the silence in which infertility issues are often shrouded.

Orange Chicken Skewers from Made Whole

These orange chicken skewers are packed with flavor and easy to throw together. They’re great on a salad or alongside grilled veggies!

I’m so excited to be sharing an easy and delicious recipe today from Cristina Curp’s brand new cookbook, Made Whole! The book has over 145 recipes that are all anti-inflammatory, paleo, and keto friendly. In addition to plenty of main dishes and several scrumptious-looking desserts, it has a big chapter of staples, sauces, and dressings that includes a couple of awesome paleo cheese recipes. If you’ve visited Cristina’s blog, The Castaway Kitchen, then you know she comes up with tons of creative low-carb recipes, many of which are Whole30 friendly, too.

Baba Ganoush with Spiced Lamb & Mint

July 16, 2018 By Becky 8 Comments

Baba Ganoush with Spiced Lamb & Mint

Turn silky smooth eggplant dip into a meal by adding a pile of fragrant meat on top! This baba ganoush with spiced lamb & mint will quickly become a summer favorite.

In case you missed my subtle Instagram announcements, I’m pregnant! For a few more hours, you can catch a glimpse of the growing bump in my stories. We’re expecting a baby girl right around Christmas, and both Ben and I are so excited.

This pregnancy is part of the reason I’ve been posting so infrequently the last few months. Even before I realized I was pregnant, I was hit with terrible exhaustion that lasted all of the first trimester and a few weeks into the second. Now, at 17 weeks, I finally feel like some of my energy has returned within the last four or five days.

It’s funny because I fully expected to have morning sickness, but didn’t at all–I got off scot-free with no nausea–but was completely unprepared for how tired I’d be. I’ve never experienced exhaustion anything like it in my whole life! No matter how much I slept, I’d wake up still tired, and only become less energetic over the course of the day.

I’ve never been a napper unless I’m really sick, but these past few months, I have napped like a champion. On days spent at home, I could nap from about 2-5, and still go to bed again around 10 pm and sleep through until 7 or 8.

Caprese Frittata

July 2, 2018 By Becky 4 Comments

Caprese Frittata

This caprese frittata is a fast and delicious way to showcase summer’s bounty. It’s just as welcome for dinner as for breakfast!

My theme this week is caprese everything. These delicious tomatoes and basil from Big Sycamore Farm were just begging to be paired up with some fresh mozzarella and turned into all sorts of caprese things. The other night I made a classic caprese salad, then last night I made caprese sandwiches that were devoured before they could be photographed. And this morning I woke up with a hankering for a caprese frittata.

Plantain Chip Migas

Plantain Chip Migas

Plantain chips are a wonderful alternative to corn tortilla chips in this easy and flavorful Mexican breakfast. And since migas are super fast to make, they’re perfect for busy mornings!

Growing up, I was obsessed with going to Mexico. It seemed so exotic and relatively close, if not to our home outside Boston then to Austin, where my mother and I went at least once a year to visit her side of the family. I had a big, dry-mounted map of the world on the wall right next to my bunk bed, and I’d stare at it every night, brainstorming a list of everywhere I wanted to go. Mexico was at the very top.

Every time we went to Texas, I would beg my mom to take me to across the border. The fact that it was less than a five-hour drive from Austin to another country seemed like too good of an opportunity to pass up. I just wanted to eat some delicious food, poke around a little, try out some of the Spanish I’d been learning, and then we could drive right back up.

These grilled lemon chicken kebabs are packed with flavor, easy to make, and paleo/Whole30 compliant. They’ll be a huge hit at summer BBQs!

Who’s ready for spring? I certainly am! After a tease of gorgeous spring weather here in Chattanooga at the end of February, it’s been downright dismal for most of March. Despite the gloomy weather, I lugged the grill out of the garage and made these grilled lemon chicken kebabs. Perhaps by grilling, I can encourage spring to make a true and lasting appearance soon!

This slow-cooker spinach and artichoke dip will totally be on the menu on game day, but if you’re not a football fan, I think it’d also be a great recipe to whip up to show your valentine how much you love them.

Golden Milk Ghee Latte

Golden Milk Ghee Latte (Paleo)

This warming and lightly sweetened golden milk ghee latte is packed with nutrients from turmeric, cinnamon, ghee, almond butter, and collagen. It will soon become a comforting and craved part of your daily routine!

I have a snow day today! There are currently a few flakes falling from the sky and I can see a tiiiiiny dusting on selected patches of ground, so naturally, schools are closed and all my appointments were canceled.

As a New Englander, I have to admit that I scoff a little when Chattanooga shuts down for a few flurries, but it’s probably the safest bet given all the mountains in the area and everyone’s lack of experience driving in wintry weather. I’m also definitely not going to complain about getting to spend another day snuggled at home drinking golden milk ghee lattes!

How to Make Ghee in an Instant Pot (or on the stove!)

January 12, 2018 By Becky 19 Comments

How to Make Ghee (in an Instant Pot or on the stove!)

It’s so easy and quick to make ghee in an Instant Pot (or on the stove), and it’s much more delicious than store-bought! Use your homemade ghee anywhere you’d use butter for more flavor and less lactose.

I’ve been making my own ghee at home for several years now, and it may be my favorite food in the entire world (apologies to macaroni and cheese, my childhood favorite).

If you’re not familiar with ghee, it’s basically clarified butter taken one delicious step further. When you cook butter and strain out the browned milk solids, the end result is a healthy, lactose-free fat that lasts almost forever and won’t burn at high temperatures the way butter does.
