Top 13 Paleo Recipes of 2013

Top 13 Paleo Recipes of 2013
As 2013 comes to a close, I wanted to share a roundup of my most popular paleo recipes.  Hopefully these will inspire you to start the new year off with some good gluten-free, grain-free eats.  I’m gearing up for a January Whole 30, so you can expect more paleo recipes that are Whole 30 compliant in the next few weeks.  All of the recipes listed below are gluten-free, and I have marked them as vegan, vegetarian, and dairy-free as applicable.  Happy New Year!

Shrimp & Zoodles with Garlic Tomato Sauce (Dairy-free) Thanks to copious amounts of roasted garlic, this sauce is so flavorful that you’ll barely notice the fact that you’re eating zucchini instead of spaghetti.
Caldo Tlalpeño (Dairy-free option) The most exciting thing I’ve ever done with leftover turkey or a rotisserie chicken.  It’s like paleo tortilla soup, but better!
Roasted Vegetable Soup (Vegetarian, Dairy-free & Vegan option) Roasting vegetables gives this soup amazing depth of flavor, and a drizzle of extra virgin olive oil and creme fraiche or coconut milk provides the perfect finish.
Caramelized Shallots (Vegetarian)  Once you’ve caramelized shallots, you’ll never look at them the same way again.  These are addictive.
Mashed Rutabaga & Squash with Roasted Garlic (Vegan) Move over, mashed potatoes!  This paleo substitute is way better, and way better for you.
Brownie Batter Truffles (Vegan) Little bits of brownie batter dipped in chocolate.  If you’re not sold, I don’t know what else to say!
Chocolate Cake with Peppermint Ganache (Vegetarian, Dairy-free) I made this cake for our anniversary and it was so delicious!  I keep trying to think of excuses to make it again.
Almond Blueberry Pie Bars (Vegetarian) These were one of my first attempts to paleo-ify a regular recipe, and miraculously, they turned out great!  They were a huge hit at my cousin’s wedding over the summer.
Strawberry Ice Cream (Vegan) This super-creamy coconut milk ice cream gets a flavor boost from a touch of balsamic vinegar.  You won’t taste it, but it makes the strawberries shine.
Molten Chocolate Cakes (Vegetarian) You won’t believe how easy it is to make gluten-free, restaurant-style molten chocolate cakes at home.  Serve this one when you need to impress!
Pumpkin Spice Ice Cream (Vegan) This ice cream base comes together in five minutes and tastes amazing.  It’s the number one paleo recipe on my site!
Double Chocolate Zucchini Muffins (Vegetarian) These muffins are my ideal breakfast: decadent, portable, and with a dose of hidden vegetables.
Mocha Mexicano (Vegetarian; Vegan & Dairy-free option) This is my go-to cold weather treat drink.  It comes together in five minutes and it’s easy to make a single serving!
Did you discover any paleo favorites over the past year?  Feel free to share links in the comments below!  Also, is anyone joining me for a January Whole 30?? #pleaseineedsomuchmoralsupport  If you need some convincing, check out these 30 reasons to Whole30.

Both! All the recipes are paleo, so they're healthy, although paleo desserts are best saved for special occasions. Most of these recipes are easy as well! Thanks for reading!
