This gluten-free strawberry-peach crisp is lightly sweetened with maple syrup 
and topped with a rich crumble made with hazelnut flour and pumpkin seeds.
 
Hello from Chattanooga, our new home! Ben and I packed everything up and drove from Boston to Tennessee across two days, arriving last night a little after midnight. I’m in love with my new city, which is Ben’s hometown, already. So far we’ve driven around a bit looking at houses, and had amazing burgers at Main Street Meats (see my bunless burger on Insta!). We’re also dogsitting for Ben’s sister, so I get to spend time with this guy.
 
I spent a while editing the photos of this fabulous strawberry-peach crisp with hazelnut-pepita crumble today. The photographs make me a little sad, because this was the last photo shoot I did in our apartment in Boston, where I’ve taken all the photos for the blog so far and all the photos for my cookbook, Paleo Planet. I hope our next apartment has light that I like just as much!

Anyway, enough wistful reminiscing about the natural light at my old apartment. We’re talking crisp today! I had some good-looking strawberries and peaches, but wanted to do more than just eat them. In part because I was trying to avoid packing, I decided to bake. (Yes, when I’m feeling stressed, I avoid whatever I’m worried about and bake instead. No, my fiancé has never complained!)
 
I put the freshly cut fruit right into the greased baking dish and added a little maple syrup, a tiny bit of tapioca flour to keep the juices under control, and a pinch of salt and the seeds of half a vanilla bean to bring out the natural sweetness of the fruit. I mixed it all together right in the dish to avoid having to wash an extra bowl. (I did have to wash the bowl I made the crumble in, but that’s it for this recipe: one bowl + the baking dish).

These grain-free coffee cake muffins make a decadent grab-and-go breakfast, complete with a cinnamon swirl inside and streusel on top.

Having a dozen freshly baked coffee cake muffins in your kitchen is like having all 12 new episodes of House of Cards waiting for you on Netflix, brand new and ready to be enjoyed. In fact, I think the muffins are even better, because I can make more of them whenever I want. Once I finish watching that last House of Cards episode, I’m out of luck for a long time.

Salted Chocolate Chip Hazelnut Cookies

Salted Chocolate Chip Hazelnut Cookies (Grain free)
I’ve had four snow days in the past two weeks. Luckily, I’ve spent my extra time off pursuing an admirable goal: baking the ultimate grain-free chocolate chip cookie.
My quest began when I saw these soft and chewy chocolate chip cookies on Alexandra’s Kitchen. Alexandra’s blog is one of my favorites. Everything she makes is mouthwatering, and I love her detailed tips and stunning, perfectly lit photographs. Basically, I’m a huge fan.
I had to have those cookies.

With a caveat, of course: I wanted them to be paleo-friendly and grain-free.
I’ve made paleo cookies before and thoroughly enjoyed them, but they weren’t the kind of cookies that could blow regular, gluten-containing cookies out of the water.  They didn’t have the holy grail: the perfect combination of crunch and chewiness.
I set out to find some grain-free cookies that fit the bill–cookies that were crisp around the edges, but chewy and a tiny bit underbaked in the center.

Cinnamon Hazelnut Date Cake

The humble date is much more delicious and versatile than one might guess based on its appearance. Dates are appealingly sticky and sweet, and their complex flavor makes you think a few aromatic spices like cinnamon and allspice may already be inside the fruit.
For this month’s Secret Recipe Club, I had the pleasure of perusing Ros’ blog, The more than occasional baker. As someone who also tends to fire up the oven more than occasionally, I was excited to see all the fabulous baked goods on her site.  From classics like chocolate peanut butter squares to innovative treats like parsnip cake, her blog has it all.
As soon as I spotted this cinnamon date cake, though, my mind was made up.  A beautiful Bundt cake sweetened with dates and flavored with cinnamon sounded like just the thing for a snowy January weekend, and it was!
For this recipe, you pit a bunch of dates and soak them in very hot water. (The pitted dates look just like hearts, so I had to stop and take a few photos. Looks like I’m in a valentine’s mindset already!) The soaked dates and then blended into a paste in the food processor so they can permeate the batter with moisture and flavor.

I’m sharing a recipe for nutella coffee cake with homemade paleo nutella over on the Healthy Aperture blog this week!

I had to turn in the post a while ago, so it’s been over a month since I actually ate the cake, and now I REALLY want some.  I can barely focus enough to write this little blurb because I am desperate to get up, go to the kitchen, and make it again.  The sweet, vanilla-scented cake has huge swirls of dark, rich nutella, and the combination is totally addictive.
