Mole-Spiced Hanger Steak with Strawberry-Avocado Salsa

Wouldn’t you be thrilled if a giant box with of a wide variety of cuts of grass-fed meat showed up at your door, just chilling over some dry ice and waiting for you to defrost as you please and get creative in the kitchen? I think any paleo or real-food cook would love it, and that’s why I’m so excited about ButcherBox.

ButcherBox is a grass-fed meat subscription service that carefully curates a unique selection of cuts each month and sends them straight to your door, complete with informative cards showing where each cut comes from, explaining how to best prepare it, and detailing a delicious recipe to try with each one. I shared about my first box and what I did with it in this slow-cooker Cuban short ribs post, and now I’m sharing a delicious hanger steak recipe along with some info on my second box. All the meat I’ve eaten from ButcherBox has been exceptional, with such good taste and texture that it’s hard to believe it was ever frozen.

Mole-Spiced Hanger Steak with Strawberry-Avocado Salsa

This month’s box contained hanger steak, four ribeye steaks, two pounds of ground beef, thinly sliced beef (perfect for stir-frying or pho), and a Scotch roast, and paleo bacon (if you’re interested in paleo bacon, too, you can get a package of it for free when you buy your first ButcherBox right here!). I was especially excited about the hanger steak because it’s so flavorful and so hard to find–it’s also known as butcher’s steak because butchers often keep it for themselves instead of selling it.

When I started thinking about how to season the steak, mole came to mind. Mole is an amazing and complicated Mexican sauce that’s usually served with chicken, and I’ve loved it ever since one of my students’ mothers first brought me a plate of it when I was teaching in Houston. I have a great recipe for chicken drumsticks with mole poblano in Paleo Planet, but I usually save it for special occasions because there are so many ingredients and it takes a while to make. I’ve really been craving the taste of mole lately, though, so I decided to use some of its main ingredients in a simple and easy-to-make dry rub.

Olive Oil Blondies (Gluten free, Grain free, Dairy free)

These olive oil blondies are irresistibly chewy in the middle and crunchy around the edges. No one will guess that they’re gluten free, grain free, dairy free, and paleo friendly!

Here they are: quintessential and perfect blondies (olive oil blondies, no less!), which happen to be free of gluten, grains, and dairy. I don’t mean to brag, but I think I really nailed it with these: no one will know they’re grain free or that they’re made with olive oil. They’re also super easy to whip up with just one bowl and one fork. No melting, no creaming, and no mixer required.

When I was little and still the world’s pickiest eater, I loved to go to Annabelle’s, a long-gone café in my hometown of Wellesley, Massachusetts, for dinner. I always got macaroni and cheese and a blondie. My nostalgia for that meal runs so deep that thinking about it still makes me really sad, despite the fact that Annabelle’s has been closed since 1994.

Paleo Chicken Piccata with Asparagus

Chicken Piccata with Asparagus (Gluten free, Paleo, Whole30)

This paleo chicken piccata is an easy, quick, and super flavorful weeknight dinner. Adding asparagus makes the already delicious combo of chicken, lemon, and capers even tastier and more nutritious.

Do you see those little green leaves gracing the top of this paleo chicken piccata? Can you guess what they are?

If you guessed parsley I can see why, but they’re actually carrot tops. Yup, as in the lengthy greens that sometimes come with a bunch of carrots, making the whole shebang almost impossible to fit into one of those little produce bags at the grocery store (I’m not the only one who has trouble with that, right?!).

I’m not a big fan of parsley. While it looks nice as a garnish, I often find its flavor too assertive, and sometimes I can barely taste whatever is underneath. So when I was at the grocery store yesterday and they were out of organic parsley, my eyes landed on a gorgeous bunch of organic rainbow carrots with their pristine, frilly greens still attached. I had no particular plan for the carrots, but I knew exactly what I’d do with the greens: chop them up and sprinkle them all over this dish. I actually just snipped them with kitchen shears, which was much easier than chopping, and their delicate flavor was perfect here. This paleo chicken piccata is so flavorful already from the capers, lemons, and ghee that it doesn’t need an assertive herb on top. (This garnish won’t use up all of your carrot tops, but you can use the rest to make carrot top-kale pesto! It’s amazing. Of course, you can also just use parsley here if you like it more than I do.)

That’s probably enough about the garnish, though–let’s talk about the paleo chicken piccata itself. This dish is so easy to make. Basically we’re pounding out chicken cutlets to make sure they’re nice and thin, dipping them in some seasoned tapioca flour, and pan-frying them in ghee and olive oil until they’re golden brown. Next we’re quickly steam-sautéing some asparagus in the same pan and making a quick sauce with chicken stock, lemon juice, capers, and a little more ghee or butter. That’s it, and dinner is served! I sometimes find chicken piccata too lemony, but the asparagus and ghee add some richer, earthier flavors here so that the balance of tart and savory tastes is just perfect.

Blood Orange Curd (Dairy free)

This dairy free blood orange curd is sweetened with honey and tastes amazing on its own, on ice cream, with chocolate cake, or on top of pancakes.

At the risk of having someone say that there are too many curd recipes on my site, I’m bringing you a dairy-free, honey-sweetened blood orange curd today. The very first recipe I ever posted here on A Calculated Whisk was for a classic lemon curd, and I also have ones for strawberry curd and dairy-free lemon curd. Oh, and there’s a paleo lemon curd in my cookbook, Paleo Planet.

Why more curd? The short answer: because blood oranges (see Exhibit A below–how can anyone resist?). The longer answer is that I wanted to see how simple and wholesome a citrus curd could get by using a base of just freshly-squeezed juices, eggs, and honey. There are two more ingredients–a tiny splash of vanilla extract and a pinch of salt–to help the orange flavor pop a little more, but that’s all you need to make this blood orange curd. It’s simple and it’s real food, but it tastes like the melted creamsicle sauce of your dreams.

If you can’t find blood oranges, you can use regular ones. The color will of course be different, but the curd will still be scrumptious. If you find Cara Cara oranges, those would be a nice compromise–I recently ate one that was darker in color than some of the blood oranges I used to make this curd.

In case you’re not entirely sure what a citrus curd is, I’ll tell you: it’s like a cross between a jam and a custard but it’s better than both, and it’s traditionally served with scones and clotted cream for high tea in England. Lemon curd is the standard, but curd can be made with any kind of citrus, or with citrus and a variety of other fruits. The basic formula is lemon juice, egg, sugar, and butter, but here I’ve omitted the butter and used raw, local honey instead of sugar without making any sacrifices in flavor or texture. This curd does come out a little thinner than other curds I’ve made because of those changes, but that actually makes it perfect for how I prefer to use it: as a sauce to elevate all manner of grain-free desserts and breakfasts from good to just ridiculous.

Dairy free, paleo apple honey upside-down cake is perfect for cool fall days. Subtly spiced and not too sweet, it’s great for breakfast or dessert!

The tradition of dipping apples in honey to celebrate Rosh Hashanah inspired me to bake this apple honey upside-down cake. Apples and honey represent the double dose of sweetness that’s hoped for in the year ahead. I didn’t get this post ready in time to share before the holiday, but this cake is an ideal dessert for anytime in the fall. Whether or not you celebrate Rosh Hashanah, everyone can use a little extra hint of sweetness as the air turns crisp and the nights begin to fall sooner.

I based this recipe on my lemon olive oil cake, which is a dessert I’ve made again and again for all sorts of occasions. This apple honey upside-down cake is the perfect fall twist on my go-to cake.

To make this cake, I poured copious amounts of honey into the bottom of a parchment-lined pan, and then arranged apple slices on top. Since the apples and honey are so sweet, I only used a tiny bit of sweetener in the cake batter itself, and included a few hints of savory flavors to balance things out. Using extra virgin olive oil instead of butter makes the cake dairy free and provides a complexity that keeps the cake from being pure, unadulterated sweetness. And ginger and cardamom, spices that play on both the sweet and savory teams, are a welcome change from the usual cinnamon.

 team up for a fast and fresh paleo dinner with tons of flavor.
As a recent salmon convert, I’m still a little bit surprised every time I bite into a piece of salmon and find that it’s totally delicious.
For so long the strange pink hue of salmon turned me off, but now I can’t get enough. My favorite way to prepare salmon is under the broiler, where it cooks in less than ten minutes flat. I love how the top of the fish gets nicely browned and even a little bit crispy (especially here, with the help of a sprinkling of maple sugar) while the inside remains perfectly tender. This caramelized salmon is inspired by a recipe from Lindsay of Pinch of Yum and it’s SO good.

My fiancé and I have been down in Chattanooga for the past few days, checking out jobs, houses, and apartments. Even though I grew up in Boston, I’ve always felt like I’m a Southern girl at heart due to my mom’s Texas roots and all the time I’ve spent down there, so I’m really excited that we’re moving to Tennessee next month. I’m almost done with graduate school, and after we move I’ll get to start my job as a speech-language pathologist working with kids of all ages (and of course, blogging in the evenings and on weekends). I’ve been wanting to make a rainbow salad for a while now, but this seemed like an especially opportune moment. Summer produce is everywhere in all its resplendent hues, and more Americans are able to get married than ever before. Let’s celebrate with this salad!

This healthy salad has pretty much all the colors of the rainbow (if you kind of merge indigo and violet together) plus pink. Pink is my favorite color and it’s not really fair that it’s not a part of the official rainbow, so I made sure it was included by making a nice pink dressing. Despite how creamy it looks, the dressing is dairy-free–the creaminess comes from the walnuts and shallots, and the color is thanks to the raspberries. It’s inspired by the creamy shallot dressing from my pan-seared chicken, orange, and walnut salad, but this one’s even better because it’s pink.

Cashew Chia Cacao Nib Pudding

This cashew chia cacao nib pudding is paleo, gluten-free, and easily made vegan. It’s also a snap to make and surprisingly satisfying!

Happy fourth of July weekend! I made you a healthy dessert packed with superfoods: chia seeds, cacao nibs, honey, and cashews. Well, I am not totally sure that honey and cashews are superfoods, but they’re not bad, right? I think this pudding would be a welcome change on a weekend when desserts are often pumped full of artificial colors and flavors. (Although, if you do need something naturally red, white, and blue, may I suggest my pico de gallo de frutas? Just use blueberries instead of kiwis.)

Since this pudding is a make-ahead dessert, it’s perfect for having guests over. While you’re out grilling lamb burgers and mixing drinks (agua fresca, perhaps?) these perfectly-sized treats will just be gelling in the fridge.

This was my first time using chia seeds and cacao nibs, and I loved them both. I wasn’t sure how I’d feel about the cacao nibs since they’re unsweetened chocolate, but while I wouldn’t necessarily eat a handful plain, they were perfect in this pudding. Some of the cacao nibs are blended with the cashew and chia base to deepen the chocolate flavors of the entire pudding, and some are sprinkled whole on top. This gives each bite of cashew chia pudding this craveworthy chocolatey crunch. It’s so good! Read More…

Succulent roasted shrimp and asparagus are served with a tangy garlic scape green goddess dressing for an easy, 30-minute paleo dinner that’s also Whole30-compliant.

I’m kind of mad at myself because I missed the boat on ramps this year. At the photography workshop I went to in May we ate them at almost every meal (there’s a picture of them in this post), and when I got home I vowed to track some down so I could cook with them myself for the first time. However, I’m a lazy late-evening grocery shopper and there were never any ramps left. Before long, their short season had ended.
You’ll be relieved to hear that I am NOT missing out on garlic scapes.

While ramps are their own kind of plant and are usually foraged wild (hence their limited availability), garlic scapes are the flowering stalks of garlic plants that farmers cut off so the plant’s energy can be fully devoted to the bulb forming below. Garlic scapes are cool looking (see evidence above) and I like their name: it sounds like they’ve been trying to escape from the head of garlic, which is pretty much what they actually do.
Garlic scapes are milder than regular garlic with some fresher, grassier notes to their flavor–kind of like a cross between garlic, scallions, and chives. Here I used them to make a green goddess dressing with some fresh herbs and Primal Kitchen’s avocado oil mayo, which I just tried for the first time. I’m not a mayo person at all so I don’t foresee myself ever eating it straight up, but once some other flavors are mixed in to create a dressing or aioli, I can usually hop on board. (If you haven’t seen garlic scapes at your local market, don’t worry. You can substitute scallions and a clove of regular old garlic.)

Slow-Cooker Short Ribs

If I had to pick one food to write a love song to, it would probably be short ribs. I just found out about them a couple of years ago when I ordered them at a restaurant expecting spareribs, and was surprised that the meltingly tender meat I received had no bones at all. The texture of short ribs feels so deluxe if you’re used to steak or ground beef. I can’t get enough!
You can buy boneless or bone-in short ribs. I usually buy bone-in because I think cooking with the bones in gives the meat extra flavor. They can be served on the bone, like in this recipe for kratiem prik thai short ribs, or off the bone, shredded, like I’ve done here.
