It’s time for an Instant Pot dessert! I recently took a little poll over on Instagram stories, and found that 74% of you have an Instant Pot. If you’re among the 26% that doesn’t have one yet, you should add it to your Christmas list–it’s my very favorite kitchen appliance of all time because of its cooking speed, ease of use, and versatility. It sautés beautifully, plus it does the work of a slow cooker, rice cooker, pressure cooker, and more. And now, we’re using it as a pie maker!

So, hi! I’m back from what I think was my longest blogging hiatus ever, and I have really missed you. I have a post coming up soon with details on what I’ve been up to in case you’re interested (spoiler alert: planning our wedding and lots of freelance work!). From now on I’ll be sharing recipes more regularly again, and am really excited to get back in the game with this amazing and super simple recipe from Amanda Torres’ new cookbook, Latin American Paleo Cooking. Amanda is the brilliant recipe developer and writer behind the blog The Curious Coconut, and she wrote the cookbook with her mother in law, Milagros Torres, who grew up in Puerto Rico and has been cooking since she was ten.

The book is full of tempting recipes for family dinners, party food, quick and easy meals, sides, cooking essentials like sauces, and desserts from many different Latin American countries. Since I’m trying to slim down for my wedding (it’s in less than two weeks!), I have not even looked at the dessert chapter. However, I’ve been poring over everything else and have a huge list of what I want to make. Empanadas are at the very top of my list (and the top of the cover of the book–don’t they look amazing?)!

Shrimp & Sausage Gumbo (Instant Pot or Not)

This paleo, Whole30-compliant shrimp and sausage gumbo is a flavor-packed meal that comes together in half an hour in the Instant Pot, and just a little longer on the stovetop.

Today’s recipe comes from my friend Megan‘s book, The Big 15 Paleo Cookbook. If you don’t have it, you need to get your hands on it as soon as possible. It’s full of simple but delicious paleo recipes made with straightforward ingredients. The book has 15 chapters, each focusing on recipes made with one of the “big 15” paleo ingredients (see the cover below to find out what they are!).

I chose to make the gumbo recipe from the shrimp chapter, and while I wondered how it would turn out since it’s made with just a handful of everyday ingredients, I was definitely not disappointed.

You don’t have to bother with a roux–this paleo shrimp and sausage gumbo gets its great flavor from vegetables, healthy cooking fat, and Creole seasoning, plus the shrimp and sausage themselves. Megan recommends using shell-on shrimp for better flavor. I was hesitant at first, but after trying it I really do think the gumbo has more flavor due to having the shrimp shells in while it cooks.

Using unpeeled shrimp also makes it harder to overcook them, which is often a problem with quick-cooking shrimp. It’s a little messy peeling the saucy shrimp, but it’s also kind of fun. I love a good hands-on eating experience! If you don’t, you can peel them beforehand or even buy pre-peeled shrimp.

Pork chops and apple compote go together so well, and this paleo recipe from the cookbook Cooking with Coconut Oil is a snap to make!

When I was offered a review copy of Cooking with Coconut Oil by Elizabeth Nyland of Guilty Kitchen, my answer was a resounding YES!  I am a huge cookbook junkie, and especially like to read books penned by fellow food bloggers.  Also, since I started eating paleo in August, I’ve loved using coconut oil in the kitchen, and was eager to learn more things I could do with it.  Today I’m sharing my experience cooking & photographing three amazing recipes from the book, and the recipe for Pork Chops with Apple Compote is at the end of this post!

Cooking with Coconut Oil arrived the day before I left to spend the holidays in Tennessee with Ben’s family, so I did not get to cook with it right away.  I had plenty of time to page through it, though, bookmarking recipes I wanted to try and craving almost everything pictured in the gorgeous photographs.  This cookbook features a large, full-color photo of every single recipe, which I love.  (Cookbooks that only show pictures of some of their recipes are a huge pet peeve of mine–I never want to make any of the un-pictured recipes!)  The book also has informational sections that cover the health benefits of coconut oil, details about many of the ingredients used in the book, and ten tips for living a paleo lifestyle.  Did you know that the medium-chain-triglycerides in coconut oil improve brain function and can have therapeutic effects on Alzheimer’s patients?  Yeah, neither did I!
